She's sweet, she's buttery, she's nutty...she's Spelt!! This week's Mafaldine is made with this "youngster" of the ancient grain world (think 6000 BCE) that showed up on the scene when wild grasses cross-pollinated with Emmer Farro. Like all ancient grains, Spelt boasts a higher protein and fiber content than modern wheat, and is much easier to digest. We think this pasta would be particularly delectable with our feature Spicy Vodka Sauce, just sayin'. Have you been enjoying all the specials lately?? If so, give alex_waverley a shout out next time you see him at the markets. He’s been with us now for a couple years and continues to grow with us. He’s become an integral part of our production managing inventory, ordering, production schedules, and even does deliveries to our restaurant partners. It’s been a real privilege working with him and seeing his creativity come to life through specials. He created one of our favorite pasta dishes ever - the miso & spam carbonara. Say hi to Alex and mind your words because one slip up can lead to some of the cheesiest dad puns ever.
