Our Security & Sleeping Officer would like to thank everyone for the birthday wishes, treats, toys and presents. 🐾

Bella received more birthday wishes today than the rest of management has received in approximately 15 years combined.

After a thorough inspection, she has determined that the bribes, donations and/or offerings were adequate.

And yes, she is happy. That's just RBF — Resting Bulldog Face. 😂

Thank you all for making my old girl's 11th birthday a great one. ❤️

MEET THE COFFEE: RIVETER 🇨🇴☕

You’ve probably had Colombian coffee before. But what exactly does that tell you about the coffee in your cup?

Our current Colombian coffee bean comes from Pitalito in the Huila region, where coffee is grown on small family-owned farms high in the Andes at roughly 5,000-6,000 feet above sea level.

This is a washed coffee, meaning the fruit is removed from the coffee seed before it’s dried. That processing method tends to produce a cleaner cup and lets more of the coffee’s natural characteristics come through.

Our current lot has a medium body and bright acidity, with tasting notes of milk chocolate, almond, citrus and dried fruit.

You’ll may also see the word Excelso used with Colombian coffee. Despite being something a supervillain would definitely yell before firing a moon based death ray, 😂 it’s actually a Colombian coffee classification based largely on the size of the green coffee beans.

And like all of our coffees, we roast it right here at Combat Coffee Roasters.

From a green coffee bean grown high in the Colombian Andes to the cup in your hand. 🇨🇴 ➡️ 🇺🇸 ➡️ ☕

Yep. We actually roast the coffee here. ☕

Today is roasting day at Combat Coffee.

Ours is a little different from the big drum roasters most people picture. We use a fluid-bed roaster, which uses hot air to actually lift and circulate the beans while they're roasting.

That airflow also carries away the chaff as it's released instead of letting it hang around and burn onto the coffee, helping produce the smooth, clean cup we're after.

When the roast is finished, the beans are dumped into the cooling tray where cool air is pulled down through them, cooling the whole batch within minutes.

Six pounds at a time. Four or five batches an hour.

So if you've ever wondered why there's occasionally coffee-scented smoke blasting out the side of our building...

Nope. We're not on fire. We're making coffee. 😂
