When old becomes new, and returning to my first salsa recipe. Today I am making the debut of our new “tornado salsa” at The Farmers Market at The Hangout. Why is it called tornado salsa? Years before El Pato Loco, I was a young man who had a love for tortilla chips and salsa. There was a local restaurant where the chips and salsa were and still are very popular. That salsa inspired my very first attempts at capturing the great flavor. Eventually I got the ingredients dialed in to make a salsa very similar to that restaurant. I used to make a batch of salsa 2 or 3 times a year for my fix and paired it with substandard store bought tortilla chips as the thought of making chips had not yet crossed my mind. Anyhoo the last batch of this particular salsa I made was May 2, 2007. I made my usual large batch and had it in a large sauce pan in my refrigerator. May 4, 2007 was a Friday, and a day that would forever change my life. That night over 90% of my community was destroyed by an EF5 tornado. There was literally nothing standing of my home taller than my knees. While digging through debris looking for anything of my life I could salvage I found my washing machine completely crushed and destroyed. Most everything was covered in dirt, insulation, and small debris of all sorts. In this filthy pile I found my salsa pan. I never saw any part of my refrigerator and never knew where it ultimately wound up. But my salsa pan was in perfect condition and perfectly clean. It was absolutely spotless. The first thing that came to my mind was the tornado must have really liked my salsa… I forgot about that old recipe until a couple of weeks ago when one of my high school classmates posted a photo of chips and salsa at that restaurant. After a short debate in my mind I decided to try and make that old recipe from 19 years ago. It goes great with our chips and well here we are. I hope y’all enjoy it as I havent had any quite like it around Houston and it is different from my salsa line up so it provides a nice alternative, and a long story.

A week from Saturday we will debut a “new” salsa. I have not made this exact salsa recipe since May 2, 2007. This was actually the first salsa recipe I tried to match the flavor of an area restaurant favorite. There is so much history and story behind this salsa that I will have to share later. Long story short I made this on May 2, 2007 and had the salsa in a large pan inside my refrigerator. 2 days later on May 4, 2007 my home along with my home town was destroyed by the first EF5 tornado since the Enhanced Fujuta Scale was created. While I never found any part of my refrigerator in the debris, underneath my crushed and destroyed washing machine which was the empty pan which contained my salsa. This pan was completely spotless and clean as if it was washed and put away. Keep in mind that everything around had mud, small splinters, insulation etc. After that when people asked me about the tornado I would say the only thing I know about it is it really liked my salsa. I haven’t made this salsa in years… not because of the tornado per se, and not because it isn’t good because it is. It is just a simple recipe compared to the artisan salsas that we are now known for. A recent facebook post from a friend reminded me of this salsa and I started thinking of my first salsa recipe how I had made small changes to dial it in. I also remembered the flavor and thought it would pair nicely with our tortilla chips. Also I havent tasted anything quite like it in the Houston Area. Therefore, coming soon is El Pato Loco’s Tornado Salsa - EF5 approved and the flavor will blow you away!!!!

Sneak preview of Fall because we are so done with this hot summer. I will also tout how life’s simple pleasures can be found in a simple salsa. One of our fall flavors has made an early debut due to a customer request. We have our cookie butter cookies out. I can attest they fit the bill for that great autumn taste and feel. Just close your eyes as you taste these and you can feel the cool crisp chill in the air as you hear the rustle of the orange and yellow leaves gently falling out of the trees. Yeah they are good. Now for the other side of our flavor street. I had a friend post about the salsa from a restaurant that is well known for its flavor and popular appeal for miles around. I actually used to make a very similar tasting salsa but stopped due to its simplicity. Well after giving it some thought I am going to revivive and work on this simple little restaurant style salsa and bring it to y’all in our upcoming markets. Don’t worry I am also going heavy in production on my artisan salsas including my habanero and mild green avocado style which to date been very difficult to keep in stock.

We asked and y’all responded. The search has begun to find Pato. He has been gone a while and we suspect he might’ve let his brief fame go to his head. My first stop is the Southeast Texas Riviera aka Galveston beach in search of our mascot in my finest GQ style outfit. Unfortunately he is not here. If y’all have any guesses or ideas where Pato might be please comment below. Our goal is to find our mascot and have him back before the Fall Festivals in October.
