Summer is already in full swing over here with my super active family — and I know we’re not the only ones juggling camps, travel, beach days, late nights, and busy calendars. That’s exactly why I love having freezer meals ready to go. A stocked freezer makes it so much easier to get a real dinner on the table without starting from scratch every night.

Happy almost summer, everyone! We are officially entering the final stretch of school over here, and my kids are COUNTING DOWN the days.
Between summer camps, vacations, sports, late nights, pool days, and trying to soak up every bit of sunshine… summer somehow feels both magical and completely chaotic as a parent.
Honestly, this is exactly why I created Garlic & Thyme in the first place — to make dinner feel just a little easier during busy seasons of life.
Wishing all of the teachers, parents, adults, and kiddos an amazing end to the school year and a fun-filled summer ahead 💛

We do all the shopping + chopping.
You just thaw, dump, and cook in your slow cooker or pressure cooker.

Chicken Mole 🤎

I’m always a little shocked that this is one of the least ordered meals when it’s on the menu—because it’s one of my personal favorites.

If I see Chicken Mole at a restaurant, I order it every time. It’s not easy to make, and when it’s done right… it’s incredible.

So I’m guessing maybe it’s just not as familiar?

The mole is a rich sauce made with tomatoes, smoky chipotle peppers, garlic, onion, warm spices like cumin and cinnamon, fresh lime… and a touch of dark chocolate.

Not sweet—just deep, bold, layered flavor. It’s one of those meals where you can actually taste the effort that went into it.
