This is called cupping. Bowls, fresh grounds, hot water, and a special spoon. I'm checking aroma, body, acidity, flavor. If something's off, it doesn't go out.

Most people never see this part. But it's the reason you can trust what shows up at your door.

I spent over 10 years making coffee for other people.

Lattes, pour-overs, espresso pulls. Thousands of them. The part I never got tired of was handing someone a cup I knew was perfect and watching their face change. That little moment made my day. Every time.

When I started Hawk Coffee, I got so excited that I get to do that again. I roast every bag to order. I bag it myself. And I show up at your door personally. Not a courier, not a driver. Me. If you have a question about your grinder, your water, why your last bag tasted flat, I'm right there at the door.

If your pour over tastes bitter, it might be a pour technique issue, not a bean problem.

When you pour too fast, you create excess turbulence in the coffee bed. That agitation over-extracts your grounds and pulls bitter compounds into the cup that a controlled pour never would.

Here's a hack I love: place an Aeropress lid over your dripper. It slows and controls the flow, reduces agitation, and gives you more flavor clarity and a sweeter cup. You can also spend the money on devices dedicated to reducing flow rate, like a melodrip. But even just the Aeropress lid makes a noticeable difference, and is worth using if you've got one laying around anyway.

Time for a new segment called Roast Age Recon. I’ve started doing this every time I’m in a grocery store. Pick up just one random bag of coffee and see how old it is.

This one is 5 months old! Peak flavor in coffee is from 7 days to 4-5 weeks post roast. After that it starts to fade pretty quick. Stale coffee is not good coffee. (Do you see that 2 year best by date? 😳)
