Friday looks good on Chicago, and Salmon Ceviche understood the assignment. ☀️

Tossed in ponzu, fish sauce, and coconut milk, topped with red sorrel, crispy coconut, and plantains, then finished tableside with coconut leche de tigre to pull all those Caribbean notes into focus. Bright, cool, and exactly the move for a day like this.
