Doin’ Time.

The biggest bottleneck at Naomi Joe has never really been coffee.

It’s been time.

Every stage of this business has been a balancing act between the hours available in a day and the dollars available to solve the next problem.

A couple of years ago, I stumbled across this Giesen W15. After seeing it in person, I realized it was one of the earliest Giesen roasters imported into the United States.

It had made its way through an auction without finding a buyer before eventually ending up on Facebook Marketplace for a fraction of what it was worth.

I didn’t really have the money. I definitely didn’t have enough work for a machine this size.

But I couldn’t shake the feeling that it represented where I hoped Naomi Joe would be someday.

So I figured it out.

For the last couple of years, it sat waiting.

Not because it didn’t work.

Because we weren’t ready.

I’ve spent the last two years trying to earn enough work to justify turning this machine on for more than a few hours at a time.

This machine was a bet on a future I hoped I’d grow into.

Most coffee companies don’t start on a 1 kg roaster. In fact, if someone asked me for advice today, I’d probably tell them not to.

But sometimes your only option is also the one that leads you to the next chapter.

For everyone who’s ever wondered why I kept roasting on such a small machine...

This is why.

I wasn’t trying to stay small.

I was trying to grow into something bigger without skipping any steps.

This W15 is still considered a small production roaster by industry standards.

It took two years for the numbers to catch up.

Turns out...

It was worth the wait.

We’re hiring.

We’re looking for kind, self-motivated people who love taking care of others and are excited about coffee.

The role
• 20+ hours/week as a barista (~$24/hr after tip pool)
• Additional production hours available at $22/hr
• We’re growing, and we expect opportunities and compensation to continue evolving alongside the business.

We’re looking for someone who can confidently run the bar solo, manage their own workflow, and help create the welcoming environment our customers have come to expect.

You’ll have the opportunity to work with some of the finest coffee equipment available, backed by thoughtfully designed systems and a team that’s invested in helping you succeed. And our customers are genuinely wonderful. Seriously, they’re sweeties.

Originally released two years ago, this year’s version has been completely rebuilt around two wildly expressive experimental coffees from Colombia.

The foundation is a clean and intensely juicy watermelon co-fermented Caturra from Brayan Alvear at Las Palmas. We blend it with Candy Blast, another experimental Colombian coffee built around watermelon and candy-like character.

Another small milestone.

It’s no secret that Naomi Joe started at farmers markets back in 2021.

When I opened the café in 2022, I stepped back from most markets because the storefront needed my full attention.

In 2023, a friend needed a job.

The café couldn’t quite support another employee, but I hired him anyway. I told him that if we were going to make it work, we’d have to build the farmers markets back up. ->

We did exactly that for the 2024 season. The markets generated enough revenue to support his position.

We loaded our little cars to the brim, met each other at the markets around sunrise, unloaded everything, set it all up, and then I’d leave to go open the café.

In 2025, Proctor Farmers Market invited us in.

A year later, it became something much bigger than I ever expected.

What I thought would simply help support the café ended up demanding an entirely new way of operating. The market outgrew our equipment, our workflow, and the systems we’d pieced together over the years. ->

So over the last several months, we’ve quietly rebuilt our mobile coffee operation from the ground up.

When people ask where the money goes, this is the answer.

It goes right back into building the business.

Into prep space, stainless tables, insulated transport, brewing equipment, organized carts, ice machines, cold storage, a van, and dozens of little improvements that make serving hundreds of people every Saturday possible.

For a long time, we were asking everyday equipment to do venue-scale work.

We made it happen, but it came at a cost. ->

Mostly, it came at the cost of our bodies.

Now that I’m in my 30s, I’m learning something I probably should have understood sooner: health is wealth.

Building a modern coffee business isn’t just about making unique coffees accessible. It’s about building systems that allow us to keep doing the work without breaking ourselves in the process. ->

Today, we’re finally at a point where our market operation feels sustainable.

We can bring great coffee to festivals, markets, workplaces, and community events without reinventing the wheel every time.

Over the last year, we’ve had the opportunity to help some pretty impactful local organizations bring their ideas to life.

From coffee labels to retail-ready products, each project has challenged us to find creative ways to balance individual brand identities with the realities of small-scale manufacturing.

Through fonts, colors, logos, and brand guidelines, we’ve learned how to create products that feel true to each client while remaining scalable, consistent, and compliant for distribution.

What started as a few conversations has grown into something we’re incredibly proud of.

We have one more collaboration launching in the coming weeks, and we’re especially excited to share it with you.

Thank you, Tacoma, for supporting our work and keeping us busy. Every project helps us continue building something special.
