Golden on the outside, soft and tender inside! This homemade Potato Bread turns simple ingredients into delicious skillet-cooked triangles—perfect for breakfast or served alongside your favorite meal.
Ingredients
• 2 cups plain mashed potatoes, made without milk or cream
• ¾ cup all-purpose flour, plus more for dusting
• 2 tablespoons unsalted butter, melted
• ½ teaspoon salt, or to taste
• ¼ teaspoon black pepper, optional
• 1–2 tablespoons butter or neutral oil, for cooking
Instructions
If starting with raw potatoes, peel and cut about 1 pound of russet potatoes into chunks. Boil until fork-tender, about 15–20 minutes. Drain thoroughly, return them to the warm pot briefly to dry, then mash until smooth. Measure out 2 cups.
Let the mashed potatoes cool until lukewarm. Stir in the melted butter, salt, and optional pepper.
Add the flour and mix gently until a soft dough forms. If it is too sticky to handle on a floured surface, add flour 1 tablespoon at a time. Avoid adding too much or kneading heavily.
Divide the dough into two portions. On a lightly floured surface, gently pat each portion into a circle about ½ inch thick. Cut each circle into four triangles.
Heat a large skillet over medium-low heat. Add a thin coating of butter or oil.
Cook the triangles in batches for about 4–6 minutes per side, until golden brown and cooked through. Adjust the heat if they brown too quickly.
Let rest for a few minutes, then serve. The outside should have golden toasted patches, and the center should be soft and slightly dense.
