No, we don’t roast our own coffee. And that’s very intentional.

Montes 9230 Specialty Coffee is our brand within the brand — created with the same attention to quality we bring to everything we make.

We chose to work with an award-winning roaster, recognized in 2025 by an independent panel of expert judges for outstanding quality.

Because quality isn’t about doing everything yourself.

It’s about knowing your standards — and choosing the right people to help you meet them.

Coffee lovers, tell us: light, medium, or dark roast? 👇

And if you haven’t tried Montes 9230 yet… maybe it’s time.

ST. CLOUD — KISSIMMEE - LAKE NONA. your oatmeal bread didn’t disappear when our storefront closed. 🤎

If you’re tired of buying bread with an ingredient list that reads more like a chemistry lesson, there’s another option.

We’re still baking our oatmeal bread with simple, recognizable ingredients — soft, fresh, and made the way we believe bread should be made.

No storefront needed.
We bake it fresh by order right here in St. Cloud.

And yes… it really is THAT soft.

Want a loaf? Send us a DM to place your order. You can also order our Ciabatta or Focaccia bread!!!

We paused. We showed up where life needed us. And now… we’re back. 🤎

The last few weeks asked a lot of me.

I finished a move. I flew to Puerto Rico when my mom needed me. I came home to get my girls ready for another school year.

And through all of it, I was reminded exactly why I built my business this way: to be present for what matters without giving up what I’ve worked so hard to build.

Today, everyone is where they need to be.

And so am I.

Back in my kitchen.
Cold brew brewing. Ovens ready.
And incredibly grateful to God for bringing me through another season.

Montes 9230 is officially OPEN again.

Artisan cookies are ready to ship.
Specialty coffee is ready to brew.
And the calendar is open for custom orders.

So if you’ve been waiting for us, this is your sign to come visit the shop.

Every order, visit, share, and recommendation helps this small business keep moving forward.

We’re back. Let’s get to work. 🤎

Baked with heart. Brewed with purpose.

The right tools won’t make you a better sugar artist.

But they’ll make the job a whole lot easier.

These are three tools I reach for almost every single time I’m decorating cakes or making sugar cookies:

• Aluminum rolling pin — Lightweight, durable, and still going strong after more than 10 years of constant use.

• Paring knife — Perfect for precise cuts where a larger chef’s knife would be harder to control.

• 6” clear quilting ruler — One of my favorites. It lets me line up my next cut without marking or damaging the dough.

Could I work without them? Absolutely.

Would I want to? Not a chance.

The right tools don’t replace experience—they simply let your skills shine.

What tool do you always reach for?
Drop it in the comments. You might help another baker discover their new favorite.

“It’s just that easy.”

Well… not at the beginning.

What you’re watching is the result of years of practice, hundreds of cakes, recipes I’ve refined over and over again, and a technique I never stopped improving.

Today, I can cover a cake in just a few minutes.

Not because I was born knowing how.

Because I refused to stop learning.

Master your recipe.
Master your technique.
And don’t be afraid to learn from someone who’s already walked the path you’re on.

One of the things I always tell my students and team is: (they will smile while reading this)

Who’s the boss… you or the buttercream?

If your buttercream is controlling you today, don’t let that discourage you.

Keep practicing.

One day, you’ll realize your hands are doing what once felt impossible.

And when that day comes…

It really will be just that easy.

Share this with the baker who feels like their buttercream is still in charge. They might need this reminder today.

Follow for more real baking tips, techniques, and encouragement from someone who’s still learning every single day.

Because great cakes aren’t built by talent. They’re built by practice, patience, and refusing to quit.

The most successful entrepreneurs aren’t the ones who never face chaos.

They’re the ones who learn how to stay calm in the middle of it.

Creating a business is one of the riskiest decisions a person can make. Running one is one of the greatest acts of faith.

We often talk about discipline, consistency, and determination. But what happens if we can’t manage our emotions? What if we lose our sense of calm?

Whether people realize it or not, calm is one of the greatest skills you’ll ever develop—not only for life, but for business.

Success means something different to everyone. But no matter how you define it, it’s almost impossible to reach if your mind is constantly operating in survival mode.

Calm allows you to be present. It gives you the space to pause before reacting, think before deciding, evaluate your options, and move with intention instead of fear.

And here’s something I’ve learned after years of building businesses…

Your business reflects your emotional state.

Your team feels it.
Your customers feel it.
Even your creativity feels it.

I’ve always joked that my cakes, my cookies, and even my coffee can tell when I’m not calm. That’s usually when everything decides to test my patience at once.

Maybe it’s not true.

But it reminds me to slow down.

Because when you learn to lead from a place of calm, everything begins to find its balance. Your business becomes more intentional. Your team works with greater confidence. Your customers feel safe with you. And people naturally want to be around the peace you create.

If you’re feeling overwhelmed today, maybe this is your reminder to stop for a moment and ask yourself:

Am I building my business from a place of peace… or from a place of constant survival?

Follow for more honest conversations about entrepreneurship, business, and building a life you don’t need a vacation from.

One simple change can completely upgrade your iced coffee—and you’ll wonder why you didn’t start sooner.

One of the coffee secrets from behind the bar that we still use every single day is this:

We never use regular ice.

We use coffee cubes instead.

As they melt, they don’t water down your drink. They keep the flavor, body, and balance exactly the way you intended from the first sip to the last.

The best part?

You can make them with leftover brewed coffee or yesterday’s cold brew concentrate.

It’s simple.
It costs nothing.
And it makes a bigger difference than most people realize.

Save this tip for your next iced latte or cold brew—and let me know when you try it. ☕️

I built a business so I could be present.

Two years ago, I thought I was building stability for an uncertain future.

Eight months later, my husband passed away.

My business became my therapy while I navigated functional depression.

Then my mom’s health began to decline.

A few weeks ago, I completely redesigned my business again.

Not because I wanted less work.

Because I wanted more freedom.

Less overhead.
Fewer obligations.
A business that could continue generating income without requiring me to be somewhere 10 hours a day.

Two weeks later, my mom was hospitalized.

That same night, I was on a plane with my family.

That’s when I realized something.

I wasn’t building a bakery.

I was building the freedom to show up wherever life needed me most.

Sometimes that’s my kitchen.

Sometimes it’s a hospital room.

Sometimes it’s simply being with the people I love.

Success isn’t building a business that needs you every minute.

Success is building a life where your business allows you to be present when it matters most.

That’s the life I’m trying to build.

And I thank God every day for giving me the opportunity to keep rebuilding it.

The biggest mistake isn’t stepping away from your business.

It’s disappearing while you’re away.

Reality is…

Life won’t always ask for permission before pulling you away from your business.

The goal isn’t to be present every minute.

It’s to build a business that keeps moving forward, even when life needs you somewhere else.

That’s real entrepreneurship.
