I think about legacy differently. I don’t just want to be remembered for a dish—I want to help build a generation of chefs who are creative, inspired, and serious about their craft. Just as important, I want them to love the work without losing the rest of their lives to it. A beautiful career should still leave room for a beautiful life.

Right now, I keep coming back to oysters. They have so much complexity, but they’re unforgiving—you have to handle them with restraint and get the balance right. I once had an oyster dish at a Michelin-starred restaurant that stayed with me, and it pushed me to think about what I could build with oysters and caviar in my own way. That kind of obsession is often where a new dish starts: one ingredient, one memory, and a lot of careful testing.

I’ve always been someone who cares deeply—sometimes enough to stress over every detail. But that care comes from loving the work and wanting people to feel the difference. There’s real joy in being in the kitchen, doing the repetition, and trying to get a little better each time. I care because I love what I do, and I’m grateful I get to keep doing it.

I chose catering because it gives me room to be creative, flexible, and present for the people I’m cooking for. The work is heavy—loading, unloading, building a kitchen wherever the event takes us—but it also opens the door to something personal. A tasting dinner, an action station, or a custom wedding menu can be shaped around the moment instead of forced into a fixed format. That freedom is a big part of why I love this work. This farmers market pizza starts with fresh naan and a few ingredients handled with care. Smoked provolone, mushrooms, truffle oil, cracked black pepper, and pecorino Romano make a combination that is rich without losing the character of the base. I love supporting local, and Furnari Sausage Co. is exactly the kind of producer I like to highlight. Donnie and the team make sausage in-house and have been doing it locally for around 19 years. My first stop at the farmers market is a cup of coffee from Evergreen. I appreciate the care they put into the roast and the experience around every cup. Kitchens have a reputation for being harsh, and some of that reputation is earned. But the chefs I respect most genuinely love food, care about their community, and want to take care of others through the work. What I hope people remember after an event is the feeling of being taken care of. Not just full, but nourished, settled, and happy enough to sit back for a minute. That is the kind of catering I care about: food that feels fulfilling, delicious, and considered in the context of the whole gathering.
