Running a small business means making tough decisions every day. Sometimes you get them right, and sometimes you look back and wish you’d done things differently. I decided to sit out this weekend’s event because of the weather, and honestly, I’ve been kicking myself over it.

But that’s the small-business grind. You own your decisions, learn from them, dust yourself off, and keep moving forward. 💪🔥

Our next stop is WEARS VALLEY FALL FEST next weekend! ❤️

Come out, show your support, try something new, and help a small, family-owned, veteran-owned business keep growing. Every customer makes a difference, and we can’t wait to serve y’all!

Hey friends, I’m suppose to set up at an event tomorrow and Sunday. The organizers said the event is still a go. Do we still try to set up with the potential for some serious weather?

According to the National weather service:
Saturday daytime: 0.5–0.75 inch of rain possible.
Saturday night: another 1–2 inches possible.
Wind gusts: up to 35 mph Saturday, with gusts up to 30 mph Saturday night.
Rain probability: 100% Saturday and 80% Saturday night.

We are only in a tent. But I also don’t want the organizers to think I’m just not showing up.

Sorry, Jellico. Unfortunately, our smoker controller went out last night, and despite trying to get it back up and running, we’re dead in the water today. I’ve already bought a backup controller and contacted the company about getting this one fixed.

That’s the thing about owning a small business that people don’t always see.

You can plan. You can prepare. You can work your tail off. And sometimes, something completely out of your control decides to go sideways anyway.

There’s no maintenance department. No equipment manager. No backup crew waiting to fix everything.

It’s you.

So you figure it out. You make the phone calls. You buy the backup. You load the trailer. You tear down. You learn from it. And then you get back after it.

Today didn’t go the way we wanted it to, but one bad day isn’t going to define The Local Que.

We’re a small, family-owned business, and we’re still building this thing one cook, one event, and one setback at a time.

To everyone who came out to support us in Jellico — THANK YOU. ❤️

We’ll be back.

Things I learned at the TVA Fair.

Day 6: Here’s the part nobody sees.

The TVA Fair was incredible.

But it hasn’t been easy.

There have been long nights.

Exhaustion.

Equipment problems.

Weather.

Running out of things.

Making too much of something.

Not making enough of something.

Trying to train people while you’re still figuring things out yourself.

And then getting up the next morning and doing it again.

That’s small business.

You don’t get to wait until everything is perfect.

You figure it out.

You fix it.

You learn.

You keep moving.

The TVA Fair showed us that people actually want what we’re building.

Now we’ve got to build it better.

The tent was the experiment.

The next step is bigger.

And we’re just getting started.

We bring the Que to you.

Things I learned at the TVA Fair.

Day 5: Somebody posted our food. Then somebody else did. Then somebody showed up because they saw it.

That’s when it hit me.

This social media stuff actually works.

😂

We’re not a giant company.

We don’t have a marketing department.

We don’t have somebody sitting in an office making content all day.

It’s me.

My wife.

Our kids.

And whatever we can squeeze in between prepping meat, running a tent, cleaning equipment and trying to get some sleep.

So when somebody takes a picture of our food and posts it…

When somebody tags us…

When somebody tells their friends…

That stuff matters.

That’s how a small business grows.

One customer at a time.

So keep sharing.

We’re trying to get this thing to 1,000 followers, and y’all are damn sure helping.

As someone who cooks for a living, there are a few pieces of equipment I rely on HARD. One of those is my vacuum sealer.

I use it constantly — storing leftovers at home, breaking down big cuts of meat, marinating, portioning stuff out, you name it.

About two years ago I bought a Meat! external vacuum sealer. It’s not the most expensive sealer out there and it’s definitely not the top of the line, but it does exactly what I need it to do.

Recently, it started struggling to pull the vacuum it needed and then just quit altogether. I reached out to the company and, honestly, it took a while to hear anything back. At that point I figured I was probably on my own and would just have to replace it.

Then, out of nowhere, they told me they were sending me a replacement.

I figured maybe I’d get a part or something I could replace myself. Nope.

Today, a brand new machine showed up at my door. 😂

THAT is how you stand behind your warranty.

I’m a small business owner, and I know how important it is to take care of the people who spend their hard-earned money with you. So when another company actually does the same thing, I notice it.

I bought one of their machines two years ago, got my money’s worth out of it, and when it finally failed, they took care of me.

I got a new vacuum sealer.

They got a customer for life.

That’s how you do business. 👏

Things I learned at the TVA Fair.

Day 4: Nobody cares how tired you are.

And honestly, they shouldn’t.

The customer doesn’t care that you’ve been up since 5 AM.

They don’t care that you’ve been smoking meat all night.

They don’t care that you’re on hour 12 of standing on concrete.

They just want their food to be good.

Hot food needs to be hot.

Cold food needs to be cold.

The tent needs to be clean.

The person taking their order needs to be friendly.

That’s the job.

And that’s one of the biggest lessons this fair has taught me.

You don’t get to be sloppy just because you’re tired.

If we’re going to build this into something bigger, we’ve got to learn to do it right when we’re exhausted.

That’s the grind.
