***NEW ROAST ALERT***

Indian Monsooned Malabar.

As some of you might know, there are 2 primary processing methods for coffee. Dry/natural or wet/washed. A third is honey processed as it hits the sweet spot of the two. These fellas from India are truly a unique bunch, they are "monsooned", a wet natural process. They are left in outdoor containers during the monsoon season and are left in the rain with occasional rotation.

The process methods can have as much, if not more, impact on the flavor than the growing region and altitude. The anaerobic processed Ethiopian Yirgacheffe we have in stock is an insane example.

While we will never turn up our noses at our friends who love our housemade syrups to complement our coffee, we truly are a coffee company for people who love great coffee. Nothing makes me happier than having guests in to sample and compare roasts.

We have some very exciting stuff coming this month. Cuppings, taste tests and more. Stay tuned.
