I present to you: Capocollo di Martina Franca
…well, my version of it. Please understand I am 5,400 miles from Apulia, I don’t have access to that fine Fragno oak nor a stone trulli. The recipe, however, is truly unadulterated. Coppa is my favorite of all Salumi. For anyone familiar with competition barbecue, the pork collar is also called the “money muscle”. It’s more than earned that title.
Fresh, hand cut pork.
Cured for 30 days in salt and cracked black pepper. Bathed for 28 hours in Soave and Mosto Cotto.
Stuffed in b**g (sorry)
White oak-Smoked for 24 hours
3 - day rest
Currently drying to 40-42% weight loss
Equalize
These will go in a larger drying chamber next week once the climate is stable. I’ll update with photos…and some new friends…🙂↔️
The most difficult part of this craft is watching and smelling everything mature through the process. It’s like being teased for 6 months straight. Why do I subject myself to that?
