**Sizzling Ribeye & Shrimp Stuffed Potato: A Comfort Food Dream!**

Hello everyone! Looking for a dinner that's both elegant and incredibly satisfying, yet super easy to make? This Sizzling Ribeye & Shrimp Stuffed Potato is just the ticket! It's packed with flavor and perfect for a cozy night in. Let's get cooking!

**Yields:** 2 servings
**Prep time:** 20 minutes
**Cook time:** 35-45 minutes

**What You'll Need:**

2 large baking potatoes (like Russet or sweet potatoes work wonderfully too!)
* 1/2 pound ribeye steak, trimmed of excess fat and cut into small bite-sized pieces
* 1/2 pound large shrimp, peeled and deveined
* 2 tablespoons olive oil, divided
* 1/2 teaspoon garlic powder
* 1/4 teaspoon onion powder
* Salt and freshly ground black pepper to taste
* 2 tablespoons butter
* 1/4 cup milk (whole milk for extra creaminess is lovely!)
* 2 tablespoons shredded cheddar cheese (or your favorite mild cheese)
* Optional: Fresh chives or parsley for garnish
**Let's Make Some Magic!**

**Get Those Potatoes Ready:** Preheat your oven to 400°F (200°C). Wash your potatoes thoroughly and prick them a few times with a fork. This helps them cook evenly and prevents any "explosions" in the oven! Place them directly on the oven rack or on a baking sheet and bake for about 35-45 minutes, or until they're tender when pierced with a fork.
**Sear That Steak:** While the potatoes are baking, pat your ribeye pieces dry with a paper towel. Season them generously with garlic powder, onion powder, salt, and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the ribeye and cook for about 2-3 minutes per side, until nicely browned and cooked to your liking. Don't overcrowd the pan; cook in batches if needed. Remove the steak from the skillet and set aside.
**Quick Shrimp Sauté:** Add the remaining 1 tablespoon of olive oil to the same skillet. Add the shrimp and season with a pinch of salt and pepper. Cook for just 1-2 minutes per side, until they turn pink and are cooked through. Be careful not to overcook them – they cook super fast! Remove the shrimp and set aside with the steak.
**Create Potato Pillows:** Once the potatoes are tender, carefully remove them from the oven. Let them cool slightly so they're easier to handle. Slice each potato lengthwise, but not all the way through, creating a "boat." Gently scoop out some of the cooked potato flesh into a bowl, leaving a sturdy shell. Mash the scooped-out potato flesh with butter, milk, salt, and pepper until smooth and creamy. Stir in the shredded cheese until it's melted and melded into the creamy potato.
**Assemble Your Masterpiece:** Add the cooked ribeye pieces and shrimp to the mashed potato mixture. Gently fold them in, distributing them evenly. Spoon this delicious filling back into the hollowed-out potato shells.
**A Quick Warm-Up:** Place the stuffed potatoes back on the baking sheet and bake for another 5-7 minutes, or until the filling is heated through and the cheese on top is beautifully melted.
**Serve and Enjoy!** Garnish with fresh chives or parsley if you like. These stuffed potatoes are hearty and flavorful, perfect for a delicious and easy meal. We hope you love this recipe as much as we do! Let us know in the comments if you try it! ❤️ .

🌶️ Chili con Carne

Servings: 6 🍽️
Prep Time: 15 minutes ⏱️
Cooking Time: 50 minutes 🔥
Total Time: 1 hour 5 minutes ⏲️

📝 Ingredients:

1 tablespoon olive oil 🫒
1 pound ground beef 🥩
1 medium onion, diced 🧅
1 green bell pepper, diced 🫑
3 garlic cloves, minced 🧄
2 tablespoons tomato paste 🍅
1 can (14 ounces) diced tomatoes 🍅
1 can (15 ounces) red kidney beans, drained and rinsed 🫘
1 cup beef broth 🍲
1 tablespoon chili powder 🌶️
1 teaspoon ground cumin 🌿
1 teaspoon smoked paprika 🌶️
1/2 teaspoon dried oregano 🌿
1/4 teaspoon cayenne pepper (optional) 🌶️
Salt and freshly ground black pepper, to taste 🧂
2 tablespoons fresh cilantro or parsley, chopped 🌿

👩‍🍳 Instructions:

Brown the Beef:
Heat the olive oil in a large pot over medium heat. Add the ground beef and cook for 5–6 minutes, breaking it up with a spoon, until browned. 🥩🔥

Cook the Vegetables:
Add the diced onion and bell pepper. Cook for 4–5 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant. 🧄

Build the Flavor:
Add the tomato paste, chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Stir well and cook for 1 minute so the spices become aromatic. 🌶️

Simmer the Chili:
Add the diced tomatoes, kidney beans, and beef broth. Stir well. Bring to a gentle boil, then reduce the heat to low. Cover partially and simmer for 35–40 minutes, stirring occasionally, until thick and rich. ⏳

Finish and Serve:
Season with salt and black pepper to taste. Spoon into bowls and sprinkle with chopped cilantro or parsley. Serve hot. 🌿✨

💡 Tips:

For deeper flavor, let the chili simmer a little longer—the taste develops even more over time. ⏳
If you prefer a thicker chili, simmer uncovered during the last 10 minutes. 🔥
Serve with rice, cornbread, tortilla chips, or a spoonful of sour cream. 🍚🥖

Enjoy your delicious Chili con Carne! 🍽️😋
