Hakkaisan is known for polishing its rice beyond the standards required for each category, reflecting our commitment to quality and refinement in every bottle.

This chart breaks down the Hakkaisan lineup by rice-milling ratio (Seimai Buai). The lower the percentage, the more the rice has been polished, resulting in a cleaner, more refined, and often more delicate flavor profile.

Whether you prefer the fuller character of a Tokubetsu Junmai at 60% or the elegant crispness of a Junmai Daiginjo at 45%, rice polishing plays a key role in shaping the style of each sake.

Gohyakumangoku rice fields🌾

One of the core sake rice varieties used here at Hakkaisan Brewery, known for producing light, clean, and crisp sake shaped by the region’s climate and water sources.

We use Gohyakumangoku in our Junmai Daiginjo 45, made from Yamada Nishiki, Gohyakumangoku, and Miyama Nishiki, with handmade koji, and spring water from melted snow. Elegant and subdued. Crisp and refreshingly clean.

We had such a great time at our recent Hakkaisan sake pairing dinner at Izanami in Santa Fe! 120 guests, an incredible menu, and plenty of Hakkaisan to go around! Special thanks to the team at Izanami Restaurant, Floating World Sake, LA Mutual Trading and to Chef Kiko Rodriguez for making the evening so special! Kanpai Santa Fe!
