Why does coffee origin matter? ☕️🌎 Where coffee is grown shapes everything from its flavor and aroma to the people and traditions behind each cup. Climate, elevation, soil, and processing methods all give coffee its distinct character, but origin tells us more than what we can taste.

Understanding where our coffee comes from helps us slow down, appreciate the work behind it, and make more thoughtful choices about what we consume. Every cup has a story, and knowing its origin brings us closer to the people and places that made it possible. At Bonito, we believe great coffee should be enjoyed with curiosity, care, and connection. 🤎

Hi, I’m Carlos, founder and head roaster of Bonito Coffee Roaster. I was born and raised in a small town in Nicaragua, where coffee was much more than something we drank, it was part of our culture, our livelihood and the rituals that brought family and community together. After moving to the United States in my twenties, I spent years in the corporate world, but I never lost the desire to return to coffee. When my family moved to Ojai in 2016, I felt connected to the land and knew it was time to bring that dream to life. I returned to Nicaragua to visit farms, meet with producers and personally find coffees that reflected my vision of a true farm-to-cup experience. Bonito Coffee Roaster began shortly afterward in the shed behind my home. Today, I still roast every small batch myself. I love discovering different coffee varietals and developing roast recipes that highlight the unique flavors within each one. Bonito was founded from my love for coffee, Nicaragua and the people who make every cup possible, and I’m proud to share a piece of that story with you.

Coffee is about so much more than what ends up in your cup. ☕️⭐️ It’s about the people who grow it, the care behind every roast, and the relationships that carry each coffee from Nicaragua to your morning ritual.

This Saturday, Carlos will be at the Camarillo Farmers Market pouring fresh Bonito Coffee and sharing more about the journey behind each bag. Stop by to ask brewing questions, discover a new favorite, or simply say hi, we’d love to see you.

One coffee. Many hands. One shared commitment to quality. ☕🤲 Long before a cup of Bonito Coffee reaches your hands, it passes through the hands of people who care for it at every stage of its journey: Hector Garcia, Farm Head at Finca San Fernando, tends to the coffee at its source. One of the many ways he cares for the farm is by applying organic fertilizer made from repurposed coffee cherry husks. Renee Pagua, Head of Santa Lucila Mill, oversees the mill and guides the coffee through processing, helping each harvest reach its fullest potential. Ibis Garcia leads quality assurance at Santa Lucila Mill. By roasting and cupping the coffee, he carefully evaluates each batch to ensure its quality. Carlos, Bonito Coffee Roaster, creates the roast recipes that bring out the distinct flavors within every coffee.

Know Your Region: Dipilto, Nicaragua ☕️🌿 Nestled in Nicaragua’s northern mountains, Dipilto is known for its cool climate, high elevations, and rich soil, all ideal conditions for cultivating exceptional coffee. Generations of local producers have transformed coffee growing into both a craft and a deeply rooted tradition.
The result? Beautifully balanced coffees with bright acidity, natural sweetness, and layered flavor in every cup. At Bonito, knowing where your coffee comes from makes every sip a little more meaningful. 🤎

☕ This Month’s Roaster’s Choice: Bourbon This month, I chose a Bourbon from Finca La Pila, a small five-hectare coffee farm in Apaneca, El Salvador. Bourbon is a traditional variety I’ve always enjoyed for its distinctive flavors, qualities that are becoming increasingly difficult to find among today’s newer coffee varieties. From cultivation through processing, this coffee is carefully tended every step of the way. I love discovering coffees like this: traditional varieties grown on small farms, with a story you can taste in every cup. I hope you enjoy it as much as I do!

Coffee’s story extends far beyond the bean. 🌱☕️ In coffee-growing regions, production can help support families, create employment, sustain local businesses, and contribute to opportunities in education and community development. From farming and processing to transportation and trade, coffee connects entire networks of people.

That means every cup carries a much larger human story. one shaped by generations of knowledge, labor, resilience, and care. Looking beyond the finished product helps us better understand coffee’s impact and make more thoughtful choices about what we drink and who we support. Because coffee isn’t only about what’s in the cup. It’s about the communities behind it. 🤎
