Smoky Jalapeño Popper Meatloaf with Creamy Ranch Drizzle 🌶️🧀🍖
Ingredients:
- 2 pounds ground beef
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- 2 jalapeños, chopped (plus extra slices for topping)
- 1/2 cup breadcrumbs
- 1 egg
- 2 tablespoons BBQ sauce
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons ranch dressing
- Chopped parsley or cilantro for garnish
Directions:
1️⃣ Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease.
2️⃣ In a bowl, mix cream cheese, cheddar, and chopped jalapeños – set aside as filling.
3️⃣ In another bowl, combine ground beef, breadcrumbs, egg, BBQ sauce, paprika, salt, and pepper.
4️⃣ Press half the beef mixture into the loaf pan, create a trench and fill with cheese mixture, then cover with remaining beef.
5️⃣ Bake for 45–55 minutes until cooked through. Drizzle with ranch and top with jalapeño slices and herbs before serving.
