Smoky Jalapeño Popper Meatloaf with Creamy Ranch Drizzle 🌶️🧀🍖

Ingredients:

- 2 pounds ground beef
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- 2 jalapeños, chopped (plus extra slices for topping)
- 1/2 cup breadcrumbs
- 1 egg
- 2 tablespoons BBQ sauce
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons ranch dressing
- Chopped parsley or cilantro for garnish

Directions:

1️⃣ Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease.
2️⃣ In a bowl, mix cream cheese, cheddar, and chopped jalapeños – set aside as filling.
3️⃣ In another bowl, combine ground beef, breadcrumbs, egg, BBQ sauce, paprika, salt, and pepper.
4️⃣ Press half the beef mixture into the loaf pan, create a trench and fill with cheese mixture, then cover with remaining beef.

Sweet Potato Pie Bars 🍠🥧✨

Ingredients:

- 2 cups mashed sweet potatoes
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup evaporated milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt

Crust:

- 1½ cups all-purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup powdered sugar
- 2–3 tbsp cold water

Directions:

1️⃣ Preheat oven to 350°F (175°C). Grease a 9x13" baking dish.
2️⃣ In a bowl, mix crust ingredients until crumbly. Press into pan and bake for 15 minutes.
3️⃣ Meanwhile, blend sweet potatoes, sugar, butter, eggs, milk, vanilla, cinnamon, nutmeg, and salt until smooth.
4️⃣ Pour filling over baked crust and smooth evenly.
5️⃣ Bake for 35–40 minutes or until set. Cool completely, then cut into bars.

Spinach and Cheese Casserole 🧀🌿🍽️

Ingredients:

- 2 cloves garlic, minced
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 2 tbsp olive oil
- 4 cups fresh spinach (or 1½ cups frozen, thawed and drained)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 large eggs
- 1/4 cup milk

Directions:

1️⃣ Preheat oven to 375°F (190°C) and grease a baking dish.
2️⃣ In a skillet, heat olive oil and sauté garlic until fragrant, then add spinach and cook until wilted.
3️⃣ In a bowl, mix ricotta, mozzarella, parmesan, eggs, milk, onion powder, salt, and pepper.
4️⃣ Stir in the cooked spinach and spread the mixture into the prepared baking dish.

Cheesy Philly Meatloaf with Steak and Peppers 🧀🥩🌶️

Ingredients:

- 1 lb ground beef
- 1/2 lb thinly sliced roast beef (beef only, no pork)
- 1 small onion, chopped
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1 cup shredded mozzarella or provolone cheese
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish

Directions:

1️⃣ Preheat oven to 375°F (190°C). Grease a loaf pan.
2️⃣ In a large bowl, mix ground beef, roast beef, onion, peppers, eggs, breadcrumbs, garlic powder, salt, and pepper.
3️⃣ Fold in half the cheese, then press mixture into loaf pan.

Crockpot Cheesy Potatoes 🧀🥔🔥

Ingredients:

- 1 (30 oz) bag frozen hashbrowns
- 1 can cream of chicken soup
- 1 cup sour cream
- 1½ cups shredded cheddar cheese (divided)
- 1 small onion, finely chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp melted butter
- Green onions or parsley (for garnish)

Directions:

1️⃣ Spray crockpot with non-stick spray.
2️⃣ In a large bowl, mix hashbrowns, soup, sour cream, 1 cup cheddar, onion, garlic powder, onion powder, salt & pepper.
3️⃣ Spread the mixture evenly into the crockpot.
4️⃣ Drizzle melted butter on top and cover. Cook on LOW for 4–5 hrs or HIGH for 2–3 hrs.
