Hildur, in the heart of DUMBO, offers a market-driven menu inspired by Scandinavian cuisine, with a nod to French bistro classics. This manifests in Melted Onion Soup topped with crisped leeks and rye, steak au poivre transformed into Swedish meatball au poivre with lingonberry and pickled cucumber, Charred Cabbage with beurre blanc and trout roe, and Princess Cake with caramel iced crème diplomat

. The beverage menu celebrates Scandinavian techniques including fermentation and ingredients to emphasize a clean European feel to the drinks, alongside a curated list of low intervention wines. The minimal design features plastered walls, bistro mirrors, textured glass and raw white oak, all meant to draw attention to the natural charm of the building’s 200 year old history. And then there's the spacious backyard, situated right underneath the Brooklyn Bridge; in other words: the place to be in the summertime.

Imbibe with us! Many of you already know our Beverage Director, Abraham Zumba, who in collaboration with our GM, Alex Schultz, crafted a cocktail menu rich in Scandinavian flavors like lingonberry and aquavit, with a full section devoted to martinis.

There’s the Lingonbaby, with housemade lingonberry soda and garnished with housemade Swedish fish, and the above pictured KØBE (kronan swedish punsch, pineapple, combier, orange vanilla cream) “essentially a Danish creamsicle.”

Our martini selection offers unique options such as the Mirepoix Martini, incorporating celery, carrot, and shallot, served with a sidecar of mirepoix “caviar”; the Salt & Pepper, infused with four peppercorns and saline; and an espresso martini with salted agave and vanilla.

Bar seating is always first come first served 🙏🏼

Get excited Brooklyn, we’re opening this Friday Feb 14th! Think, Scandinavian cuisine with a nod to French bistro classics. What does that look like? Melted onion soup with crisped leeks and rye, charred cabbage with beurre blanc and trout roe, and our favorite - Swedish meatball au poivre.
