Quick Veggie Pickles

2 medium carrots, peeled, cut into coins or matchsticks
¼ head cauliflower, cut into small florets
½ medium red onion, thinly sliced
1 small red pepper thinly sliced
2 long mild peppers ends trimmed and seeds removed - sliced
2 to 3 cloves garlic, smashed and sliced
2 teaspoons whole peppercorns, optional
2 teaspoons dried herbs,
optional
For the brine:
1 cup white distilled vinegar
¼ cup rice vinegar or apple cider vinegar
1 ¼ cups water
2 teaspoons sea salt
1 tablespoon sugar

Instructions

Locate one 32 ounce glass jar with a lid. Make sure the jar is clean by pouring a small amount of white vinegar inside, screwing on the lid, and shaking for a few seconds. Let stand for about a minute, then rinse. (There’s nothing scientific about this; it’s just a simple step I take to improve the cleanliness of the jars.)
Fill the jar with the prepared vegetables and any flavorings you’re using, such as peppercorns, garlic, fresh or dried herbs. Set aside.

A good example of the Malay influence on South Africa’s cuisine. The word sosatie comes from the Indonesian words "sesate" (skewered meat) and "sate" (spicy sauce). They are made with small pieces of meat threaded on thin wooden skewers, with cubes red onion and dried apricots in between. Unlike kebabs, "sosaties" are marinated in a curry marinade for 24 hours. GRILLED PERI-PERI PRAWNS

Ingredients:

6 large raw king prawns, cut down the back and deveined (marinade in some olive oil, sea salt and pepper, plus a couple of cloves of crushed garlic)
PEMBA Peri Peri Sauce
Salted Butter
Fresh Lemon

1. Firstly prep the prawns, keep the heads, tails and shells on. Take a sharp knife and make an incision down the back on the prawn and its digestive tract. Then wash out any black bits. Set aside until all the prawns are done then mix in a tray with the olive oil, garlic, salt, and pepper. Pop in the fridge until you are ready to go.
2. When ready to eat, heat up a BBQ, cast iron griddle or frying pan until smoking, then grill the prawns for about 4 minutes on each side, depending on how big they are. Cook until pink and opaque.
3. Drizzle 2 Tablespoons melted butter and add 2 Tablespoons Peri Peri PEMBA Sauce - you can add more if you like more heat!
4. serve a big pile of prawns in the middle of the table, along with the salad and extra peri peri sauce on the side for everyone to get stuck in and help themselves!

Delicious and succulent, these PEMBA Peri~Peri prego rolls are made with juicy steak grilled in a flavorsome marinade served on a fresh bread roll.

Ingredients

For the marinade
* 3 tbsp PEMBA Peri-Peri sauce
* 1/4 cup White wine
* 2 garlic cloves
* 1 bay leaf
* 2 tbsp olive oil
* 1 tsp salt

For the prego rolls
* 4 sirloin steaks sliced in half, to result in 8 thin steaks
* 4 bread rolls
* sliced tomato
* sliced onion

For the peri~peri butter
* 1-2 tablespoons PEMBA Peri~Peri sauce
* ½ cup butter room temperature

1. Prepare the steak: Slice sirloin or rump steak in half horizontally to create two thin steaks, alternatively ask your butcher to cut thin steaks for you. Thin them out even more with a meat mallet until they are around 1cm/third of an inch thick.

2. Make the marinade: Combine all the marinade ingredients in a blender and blend until smooth. Pour the marinade over the steaks and allow to marinate for at least 30 minutes but up to 24 hours, covered in the fridge.

3. Cook the prego steaks: Heat a large griddle pan, skillet or outside grill until scorching hot then quickly cook the steaks (approximately 1-2 minutes per side) until caramelized on both sides. Remove and allow to rest.

4. Make the chilli butter sauce: Mix PEMBA Peri~Peri with room temperature butter and warm until just melted

5. Assemble and serve: To serve, spread the butter sauce on toasted bread rolls traditional Portuguese rolls are used and top with the cooked steak, grilled onions and fresh tomato.
