Where has today gone? Join me (Ryan) in wishing our fearless pasta leader a happy birthday! Yes, that’s right, the younger and arguably more gray-laden of the two of us is off celebrating his big day and rightfully so.

There’s a lot of Danny in everything we do here; the attention to detail, the care for the craft, and the belief that the little things are worth getting right. So much of what makes Nicoletto’s special comes from the heart and hard work he puts into it, often behind the scenes.

You asked for it! We did it.

It took almost 2 years of development, and we couldn’t be prouder of the final product. From extrusion, to hand spreading every batch on rods, to 24–48 hours of low-temp drying, to designing the perfect boxes with the team at Hoodzpah — we learned a lot, ate a lot, and thankfully found some great Nashville organizations to help feed with our mess-ups along the way.

But here we are!

Introducing our first 3 long cuts: Spaghetti, Fettuccine & Linguine.

Each one holds its own in your favorite Italian dishes, and we couldn’t be more excited to finally complete our bronze cut dried pasta lineup with these three.

Our love letter to Ziti.

It holds an irresponsible amount of creamy vodka sauce. It can handle a heavy meat ragù without falling apart. You can cover it in cheese, throw it in the oven, and intentionally burn the edges because apparently that’s when pasta gets even better.

Honestly, Ziti is kind of a show-off.

It’s also quickly become the #1 dish at our restaurants, so unfortunately its ego is now completely justified.

Our newest dried cut is available now on our website, in our stores, and to all of our wholesale customers.

We are so excited to officially announce that Nicoletto's Pasta Co. is opening our third location at 11324 Lebanon Road in Mt. Juliet!

Mt. Juliet will be our largest footprint yet (3,000 sq ft!) and will feature everything you love about our East Nashville and Donelson spots—plus an expanded Italian specialty market, a coffee & espresso bar, and b**r & w**e service.

When we started this company in a small East Nashville warehouse—fixing up vintage pasta machinery by hand—we dreamed of building a place where families could sit down together over a great, fresh-made meal. Carrying our family name and traditions to MJ is a massive milestone for us, and we can’t wait to pull up a chair for you.

Construction is officially underway with our partners at and KSR GROUP, targeting a Fall 2026 grand opening.
