Grilled Shrimp Pizza
Ingredients
Dough: 2 teaspoons honey
1 package active dry yeast (about 2 1/4 teaspoons)
1 cup warm water (100° to 110°) 2 1/4 cups all-purpose flour (about 10 ounces), divided
6 tablespoons stone-ground yellow cornmeal, divided
1/2 teaspoon salt
Cooking spray
2 teaspoons olive oil, divided
Remaining ingredients:
36 large shrimp, peeled and deveined (about 1 pound)
1/8 teaspoon salt 2 cups (8 ounces) shredded part-skim mozzarella cheese
2 cups (8 ounces) queso fresco, crumbled
6 tablespoons green salsa, divided
1/2 cup fresh cilantro leaves, divided

How to Make It
Step 1
To prepare dough, dissolve honey and yeast in 1 cup warm water in a large bowl; let stand 5 minutes. Lightly spoon flour into dry measuring cups; level with a knife. Add 2 cups flour, 2 tablespoons cornmeal, and 1/2 teaspoon salt to yeast mixture; stir until a soft dough forms. Turn dough out onto a floured surface. Knead until smooth and elastic (about 6 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel slightly sticky).

Step 2
Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.)

Step 3
Divide dough into 2 equal portions. Working with one portion at a time (cover remaining dough), roll each into a 10-inch circle on a floured surface. Place dough on 2 rimless baking sheets, each sprinkled with 2 tablespoons cornmeal. Brush each portion with 1 teaspoon oil; coat lightly with cooking spray. Cover with plastic wrap; chill.

Step 4
Prepare grill.

Step 5
Thread 6 shrimp onto each of 6 (12-inch) wooden skewers. Sprinkle shrimp with 1/8 teaspoon salt. Place skewers on grill rack coated with cooking spray, and grill for 2 minutes on each side or until shrimp are done. Cool slightly, and coarsely chop. Combine cheeses.

Step 6
Remove plastic wrap from 1 dough portion; discard plastic. Slide dough onto grill rack coated with cooking spray, using a spatula as a guide. Grill 3 minutes or until lightly browned; turn. Spread 3 tablespoons salsa over crust, leaving a 1/4-inch border. Top with half of the shrimp and 2 cups cheese mixture. Grill an additional 3 minutes or until crust is golden brown and cheese melts. Remove and keep warm. Repeat procedure with remaining dough, salsa, shrimp, and cheese mixture. Sprinkle each pizza with 1/4 cup cilantro. Cut each pizza into 6 wedges.

Jalapeno and Cheese Grilled Chicken
Ingredients
4 chicken breast butterflied and pounded thin
1/2 cup salt
1/2 cup sugar
water for brining
8 slices bacon
2 Tablespoon freshly ground black pepper
2 Tablespoon garlic powder or minced garlic
2 Tablespoon paprika
fresh or pickled jalapenos? we liked fresh, sliced thinly, best about 1/3 cup
provolone cheese slices one for each chicken breast

Instructions
Place chicken in large bowl and cover with water. Add 1/4 cup salt and 1/4 cup sugar to 2 cups water. Brine for 4 to 12 hours in the refrigerator.
Heat grill to 350 degrees.
Remove chicken from brine and wash to remove some of the salt.
Butterfly chicken then pound thin. Wrap bacon around chicken and secure with a toothpick. Season chicken and bacon with pepper, garlic, and paprika. Grill until meat thermometer inserted in the thickest portion registers 150 degrees. Add jalapenos then cheese and heat until cheese melts. Enjoy!

Blossom Onions Grilled and Planked with Red Pepper Aioli
Ingredients
Large sweet onions, like Vadalia's
1 large grilling plank, cedar, hickory, maple, etc. soaked for over 2 hours ( I could fit 3 onions on mine but plank sizes vary).
Italian seasoning blend, dry
grated romano or parmesan cheese
granulated garlic
paprika
olive oil
salt and pepper to taste
fresh herbs for garnish
FOR THE RED PEPPER AIOLI
1 cup of roasted red peppers, either made yourself or a good jarred one that has been drained and patted dry well
¾ cup of good organic mayonnaise
1 crushed garlic clove
salt and pepper to taste

Instructions
Prepare your onions by cutting ½ inch off the stem end, then peel all the skin off.
Place onion cut side down, then ½ inch from the ROOT make a downward cut straight to your cutting board.
Repeat to make four evenly spaced cuts around the onion.
Continue slicing evenly between sections until you have 16 evenly spaced cuts.
Turn the onion over and separate the petals.
on foil ( for easy clean up) sprinkle your onions with the Italian seasoning mix, salt and pepper and grated cheese.
Finish by generously drizzling olive oil all over.
Place on plank, if using.
Have grill heated on low and cook until petals pull off easily and our soft and tender. About 1 hour.
Garnish with fresh basil and parsley.

FOR THE AIOLI
Place all the ingredients into a food processor until well blended.

EASY ONE BOWL BROWNIES
INGREDIENTS
1/2 cup butter, melted
1/4 cup cocoa powder
1 cup white sugar
1/2 teaspoon vanilla extract
2 eggs
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate chips

INSTRUCTIONS
Preheat the oven to 350 degrees. Grease an 8 x 8 inch pan with non-stick cooking spray or line with foil.

In a large bowl, mix the melted butter, cocoa, sugar, vanilla, eggs, flour, salt, and baking powder.

Stir in the chocolate chips.

Bake in the preheated oven for 20 - 25 minutes. To see if the brownies are done, stick a fork or toothpick in the center of the brownies: if it comes out with crumbs the brownies are done; if it comes out with wet batter continue baking. Let brownies cool and cut into 9 squares.
