Tonkotsu Gyokai Tsukemen / Ramen

We hope you enjoyed our updated version of our Tonkotsu Gyokai Ramen!
It took us a while to find the right ingredients for this one and it was a fun one for us to put together.
It started with a larger ratio of pork bones/meat to water and we reduce it down quite a bit to get a thicker more condensed soup. Throughout the soup cooking process, more bones/meat like chicken are added. The morning of ramen service, we bring the soup up to temp and steep Japanese dashi ingredients such as pulverized thick-cut bonito for a punchy, umami-filled soup.

Ramen includes: pork/chicken and gyokai tonkotsu soup, shoyu tare, niboshi-scallion oil, togarashi, amazu, thin low hydration noodles, smoked pork belly, gokobuto menma (shout out to Ramen512 for proving this for us 🙏🏼), scallions, nori, gyofun, Naruto maki.

Tsukemen (test bowl shown) includes: condensed pork/chicken gyokai tonkotsu soup, shoyu tare, niboshi-scallion oil, togarashi, amazu, medium-thick noodles, smoked pork belly, gokobuto menma, scallions, nori, gyofun, Naruto maki.

Classic Tonkotsu Ramen

Our classic tonkotsu ramen with scratch-made noodles and made with a soup from pure pork bones and meat.
Ramen Prosper doesn’t use any pre-made / pre-packaged seasonings or bases. We make all components such as the soup, and tare to season the soup, from scratch using techniques from Japan. You can taste the difference because there is a difference. 🍜

We carefully blend flours together to perfectly match the thicker soup from this tonkotsu. We mix and knead our own noodle dough and cut each sheet to the perfect length for maximum slurpability.

We top this ramen with our own tender smoked pork shoulder chashu and pork belly chashu, sautéed garlic bean sprouts, scallions, nori, and pork-niboshi lard.

We deeply enjoy making ramen and can’t wait to continue sharing these bowls with you! 🍜

Shoyu Tsukemen

This is one of our personal favorite ramen styles. This one features a clear soup of pork, chicken, and dashi with shoyu tare. The flavors are condensed and jam-packed with umami. Featuring amazu for that sweet sourness, gyofun for the ocean umami, and our kaeshi providing deep richness and shoyu complexity. It’s such a perfect ramen style for summer.

Spicy Tonkotsu Ramen
We hope you enjoyed our spicy take on a classic tonkotsu yesterday!
This tonkotsu is made from a 100% pork bone and meat soup. Seasoned with our combo shio and shoyu tare and finished with our scratch-made aromatic-laden chili oil, this bowl brings the heat, aromatic sesame and garlic flavor, and the richness from a hearty tonkotsu soup.
We use our scratch-made low-hydration thin noodles for this one. The bowl is topped with smoked pork shoulder, smoked pork belly, sautéed garlic bean sprouts, scallions, nori, and our house-made chili paste for even more heat and umami.

Obaasan-men (Grandma’s Ramen, Fideo style)
We hope you enjoyed our Obaasan-men last weekend.

This ramen is inspired directly by a home-cooked fideo, the food we grew up eating on a regular basis.
We start with a pure chicken soup, season it with our carefully made shio tare, and made scratch-made noodles from semolina and a couple of other flours.
Topped with chicken breast chashu, ground chicken soboro with cumin and other spices, roasted calabaza squash, Oaxaca cheese, lime Serrano kosho for tartness and heat, and cilantro.
This soup is interesting and evolves as it’s eaten. It starts as a nice, simple, and warm chicken soup. But as the soboro dissolves into the soup, halfway through the bowl it becomes more complex, and introduces spices and more salinity on the palate.
We hope you enjoyed this bowl and much as we enjoy making ramen.

Menudo Tonkotsu Ramen Limited Special

We had a ton of fun making a menudo ramen last weekend!
We made this exactly like a traditional menudo, using beef tripe and trotters, but with the adding of pork bones for that tonkotsu spin. Dried guajillo, arbol, and ancho chilies get blended in, as well as plenty of aromatics and spices for a rich, yet tasty menudo.

Tonkotsu Gyokai Ramen
Our goal with our tonkotsu soup is to layer on the flavors, so that the result is one of the most flavorful tonkotsus you’ve ever had.
We emulsify all of the dissolved solids from the pork bones, meat, and fat for that richness, AND layer on concentrated gyokai via dried sardine and pulverized bonito flakes, THEN add a scratch-made dashi for even more umami and complexity. This results in a soup where the flavors come in waves instead of a flat salt bomb. This soup is heavy on the collagen from pork bone extraction and has body. This soup isn’t “fishy” in a sense, but the gyokai’s role is to add the “ocean umami”.
When tasting this soup, you’re first hit with the creamy pork richness, then you’ll notice on your palate that there’s some depth to it that goes further than just pure pork flavors. All this, plus our combo shio/shoyu tare that we carefully craft, and niboshi-scallion oil, this bowl almost feels three-dimensional. 🐷🐟🍜
