Tonkotsu Gyokai Tsukemen / Ramen
We hope you enjoyed our updated version of our Tonkotsu Gyokai Ramen!
It took us a while to find the right ingredients for this one and it was a fun one for us to put together.
It started with a larger ratio of pork bones/meat to water and we reduce it down quite a bit to get a thicker more condensed soup. Throughout the soup cooking process, more bones/meat like chicken are added. The morning of ramen service, we bring the soup up to temp and steep Japanese dashi ingredients such as pulverized thick-cut bonito for a punchy, umami-filled soup.
Ramen includes: pork/chicken and gyokai tonkotsu soup, shoyu tare, niboshi-scallion oil, togarashi, amazu, thin low hydration noodles, smoked pork belly, gokobuto menma (shout out to Ramen512 for proving this for us 🙏🏼), scallions, nori, gyofun, Naruto maki.
Tsukemen (test bowl shown) includes: condensed pork/chicken gyokai tonkotsu soup, shoyu tare, niboshi-scallion oil, togarashi, amazu, medium-thick noodles, smoked pork belly, gokobuto menma, scallions, nori, gyofun, Naruto maki.
