🥕 6–8 carrots (peeled, whole or halved)
🛢️ 1 tbsp olive oil
🧂 Salt & pepper
🍗 2 chicken thighs (bone-in or boneless)
🧂 Salt & black pepper
🛢️ 1 tbsp olive oil
🧈 1 tbsp butter
🧄 3 garlic cloves (minced)
💧 ½ cup chicken broth
🥛 ¾ cup heavy cream
🌿 1 tsp dried thyme or mixed herbs
🥛 ¼ cup milk (for mash)
🧈 1 tbsp butter (for mash)
🌿 Fresh parsley (chopped, for garnish)
👩‍🍳 Instructions
Cook potatoes: Boil potatoes in salted water for 12–15 minutes until fork-tender. Drain.
Roast carrots: Toss carrots with olive oil, salt, and pepper. Roast at 200°C (400°F) for 20–25 minutes until caramelized.
Sear chicken: Season chicken and sear in a hot pan with oil for 5–6 minutes per side until golden and cooked through. Remove.
Make sauce: In the same pan, melt butter, sauté garlic (30 seconds), add broth, then cream and herbs. Simmer 3–5 minutes until slightly thickened.
Finish chicken: Return chicken to the pan and spoon sauce over. Cook 2–3 minutes more.
Mash potatoes: Mash potatoes with butter, milk, salt, and pepper until creamy.
