Getting into the mood of the "BER" months. Even if it is 103° out!!! 😅 Worked on some rocky road fudge 🍫 and some peanut butter fudge 🥜 this week. Robert Hand liked it so much he made a double batch of peanut butter fudge for the house because I took all of it to the shop. 🤣

This is the batch of caramel that came out perfect. The burnt batch is right behind it. I couldn't stop "tasting" it to make sure it was just right!!! 😅 I'm supposed to be watching what I'm eating. But, it's hard when you make something new.

Just made caramel sauce using the melted sugar method. You need a lot of patience and a good digital thermometer. I switched to this non-stick pan after overcooking the prior batch in a thick bottom stainless steel pot. It was just a tad bit overcooked.
