I can with full confidence and pride say that I truly know where our food comes from for culinary events that I serve or teach. I never thought my culinary path would lead me to this place as a chef who can say those words with such authenticity. It is a true privilege to go visit the farms I source these foods from and spend time

talking with the farmers to understand what dedicated efforts they offer each and every day to their artisan trade. My endless gratitude to each of the amazing humans behind the stellar ingredients in my culinary creations. Working with each of them I DO know where my food comes from and I feel great gratification in providing a beyond exceptional and unique culinary experience to my customers to improve our health, our planet and our souls. ur Ingredients come from local farmers, growers, fisherman, ranchers and roasters. We put priority on the producer's techniques to ensure that their practices are humane & sustainable. Produce and plants brought to the table are, whenever possible, sourced directly from local farms that are organic certified or follow beyond-organic growing methods. If a local source for an ingredient is not available an organic option from a vetted source will be used. The meat farmers we work with allow their animals to enjoy a Free Rangin' lifestyle as nature intended, never using any antibiotics or hormones. There are absolutely no genetically modified ingredients used in our kitchen.

The most inspiring place for Chef Kristina San Filippo to develop new dishes or to plan for an upcoming menu is standing among rows of plants that are laden with a bounty of potential ingredients, or when she ventures out into the fields with the free ranging animals that are destine to be nourishing proteins. Physically being at a market or local farm, and ideally a local farm that follows sustainable growing methods, allows a chef to choose elegant produce items that are brimming with flavor and nutrition. This hands on experience is the most direct connection a person can attain to the food they eat. When creating new healthful and unique recipes, it is also a focus for Chef Kristina to search out sustainably harvested seafood or humanely raised meat and poultry as a protein element of the dish.
