Two new specials starting today:
CHILES EN NOGADA 🇲🇽
Ground beef, pork, lamb, almonds, peach, Asian pear, apple, banana, raisins, poblano pepper, coated in egg batter and served in a cream cheese, walnut, brandy sauce. Topped with fesh walnuts, parsley, and pomegranate, and served with Sopa de Fideo (fideo noodles in a savory tomato broth)
Chiles en Nogada is a historic Mexican dish that originated from Chef Dionicio’s hometown of Puebla, and it is considered by many to be the national dish of Mexico. The presentation showcases the 3 colors of the Mexican flag: green, red and white. Legend says that this dish was invented by Augustinian nuns in 1821. It was to celebrate and honor General Agustin de Iturbide, a leader of Mexico’s independence war.
ENCHILADA AGUSTINAS 🇲🇽
3 corn tortillas stuffed with ground beef, pork, lamb, almonds, peach, Asian pear, apple, banana, raisins, poblano pepper, topped with mole poblano, pomegranate, and fresh walnuts. Served with a side of rice and beans.
Legend has it that those same Augustinian nuns used the fruit and meat filling for enchiladas when they ran out of fresh poblano peppers.
Both dishes will be available from today until the end of September, which coincides with the harvest season of the ingredients and Mexican Independence Day in September.
