Ahead of the highly anticipated opening of his West Texas restaurant, The Sleeping Lion, Houston gets to take the first bite. Dylan McShan — chef and owner of The Sleeping Lion, opening soon in Fort Davis, Texas — has cooked in some of the country’s most respected restaurants and spent his formative years in Houston’s vibrant dining community. From there, he headed west to build something of his own: a restaurant rooted in the landscapes, traditions, and ingredients of Far West Texas.
His cooking blends live-fire techniques, seasonal produce, and a distinctly Americana point of view — refined, yet deeply connected to place.
For one night at Perseid, Dylan returns to Houston, where his career truly began, to share an early preview of The Sleeping Lion. Inspired by the high desert, summer harvest, and the spirit of West Texas hospitality, the menu offers a glimpse into the food, stories, and gathering place taking shape beneath Sleeping Lion Mountain.
