This is your sign to get creative with our house-made syrups!

We decided to play with our hibiscus syrup from on our summer menu and came up with some delectable combinations:

Hibiscus Liliko‘i Limeade - tastes like a tropical sunset, perfect for hot summer days ☀️🌅

Hibiscus espresso tonic - the slightly sweet syrup balances the bitterness from the tonic as the floral notes of hibiscus play with the chocolate tones from our Palila espresso 😋🌺

And of course, we had to include our summer special, Hibiscus Nitro Mamaki a refreshing, fully Hawaiian treat.

Wine yeast fermentation is a true labor of love, but it brings us coffees like our celebrated Kona Noir (now available for the month of June).

This exceptional lot was grown by Kona farmer Franck Carisey, whose meticulous cultivation brings clarity and dimension to the fruit. After harvest, the coffee undergoes a controlled fermentation with a wine yeast typically used for Riesling, Viognier, and Chardonnay. Much like a vintner crafting a cuvée, this process enhances the aromatic lift and deepens the natural complexity of the variety.

Kona Noir is one of our most treasured coffees, a rare Hawaiian expression of the famed SL-34 variety that evokes the fruity-floral finesse of Geisha coffees and the deep, wine-like character of Kenya's best, yet remains unmistakably shaped by the volcanic slopes of Kona. Its profile is vivid, aromatic, and full of movement, offering a tasting experience that feels both refined and transportive.

Meet one of our artisans - Law!

Law's story is truly a farm(er) to cup(per) story. His first job in coffee was as a farmer - today he roasts coffee grown on trees he planted years ago! Between farming and working for us, he dabbled in brewing (beer & kombucha) before coming back to his coffee roots. He roasts our coffee daily, participates in frequent cupping for quality control, and mills all the coffee we receive from Kaʻū growers.

As a roaster, Law is in a perfect position to experience and appreciate the unique coffee varieties Hawai‘i has to offer. Bourbons, Geishas, Maragogipe, SL34, Lempira, Caturra, and the wide expression of Typica from the island - Law has roasted and tasted them all. And like all those who love specialty coffee, he’s developed an expensive taste for Kona Geisha, though Kaʻū coffees are his favorite for their complex terroir.

Law was born and raised on the Big Island, so his love for Hawaiian coffee runs deep. One of his favorite parts of being a roaster is building respect and awareness for Hawaiian coffees. Law wants further amplify the best coffees on the island and eventually build with his own blend staring from bean, through to processing and roasting, then get it scored by Coffee Review.

Our favorite duo is leaving May 31st. Now's your chance to experience these two heirloom varieties side by side.

Kaʻū Yellow Bourbon - Bright, juicy, & complex. Richly floral notes of wisteria and dried peach rise from the aroma, followed by the bright pop of tangerine & the deep, roasted whisper of cacao nib.

Kaʻū Red Bourbon - a decadent & layered cup with roasted cacao depth & the bittersweet crunch of brownie crust; plum cake & dried cranberry balance with a subtle tartness & a velvety finish

You couldn't possibly be expected to choose a favorite, so we recommend trying both 😉

Let's talk world coffees...

We gush all the time over our Hawaiian coffees - we really can't help it - but we don't get as much time to chat about our world coffees, why we roast them, and why we love them too.

Just like with our Hawaiian coffees, our world coffee are all direct-trade, meaning they are sourced directly from farmers or cooperatives (we love it when the money goes straight into the hands that tend the coffees). Direct-trade helps keep the supply chain transparent, allowing us to confidently provide a greater breadth of coffee offerings.

Take the beans sourced from Santa Marta Coffee in Guatemala. We buy from this farm because they hold the same value of quality, sustainability, and stewardship at heart. Their shade-grown, hand-picked Arabica coffees are to die for, and their farming practices support local wildlife and native plants. These beautiful bags held some red bourbon that was used in each of our world blends last week.

Lastly, our world blends are inherently more economical. If you've ever gawked at the price of Kona and other Hawaiian coffees, first read our article to understand the necessity of that price (link in comments), and then give our world coffees a try! We love our Wai Meli blend - an equal marriage of Hawaiian and world coffees.

Finally, we can share a secret we've held close for months...

this Saturday, we're airing on "World's Greatest!" on Bloomberg TV, having been selected as one of the world's greatest coffee companies.

Join us alongside the WG team as we take you from farm to cup: harvesting and processing fresh cherry at one of our favorite farms in Kaʻū, to behind-the-scenes roasting and serving at our Hilo headquarters. It's a glimpse at an artisan process few get to see.

We have a deep history with this coffee variety...
In 2013, when Big Island Coffee Roasters was powered only by our two founders, Kelleigh & Brandon, too much caffeine, and a dream, something amazing happened. After several years spent reviving the land, testing processing methods and training their palates to taste the results, their little farm in Puna won a big prize for a special coffee variety - Bourbon.

Puna pink bourbon, to be specific, a cousin to the Yellow and Red Bourbons featured in this photo (and featured this month in our online shop). Puna Pink Bourbon earned Grand Champion in the Hawaii' Coffee Association Statewide Cupping Competition and became the first and only Puna coffee to receive the award.

Now, we're thrilled every time we get to feature a Bourbon cultivar on our coffee menu. The Bourbon variety tends to have heavier, richer flavors - like dark chocolate and dark fruit - and more complex acidity (think red wine), lifted by abundant sweetness. Just read the tasting notes for this month's two Bourbon offerings:

Kaʻū Red Bourbon: Decadent and layered, with roasted cacao and brownie crust that form the foundation of its rich, satisfying depth.
