A group of American military wives arrived at the restaurant for a snack when the kitchen was already closed. Rather than turn them away, Ignacio ‘Nacho’ Anaya improvised with the few ingredients he had left.
The Ingredients: Fried corn tortillas, cheddar cheese, and pickled jalapeño peppers.
The Name: When the women asked what the delicious impromptu dish was called, Anaya named it “Nacho’s Especiales” (Nacho’s Specials), after his nickname.
