It is pretty wild to think that when we close this Thursday we will be concluding our first month as working out of the trailer full-time!

We certainly had our share of ups and downs in these first few weeks but I am so excited as I look ahead to September!

I had to take a picture of this car I passed in a parking lot. Gotta say, there are two great messages here!

Moments like this when I hear about people telling others have been so encouraging and have been happening more frequently!

I just needed to take a moment to thank God for His grace and provisions first and second thank this wonderful community that continues to adopt and support my family and me!

Wow, this has been quite a day!

First, a big thank you to John and East Appalachian Electric for getting our issues sorted so quickly this morning! When we needed someone ASAP, John made it happen and provided professional and thorough service.

However, I am starting to feel like we may be one of Mosheim 's best kept secrets 🤣.

In all seriousness, I am trying to get the word out about the food we offer and we now have some great marketing material that I was able to distribute to several businesses up and down the 11-E. I had a great time stopping in at many local businesses and dropping off some menus and coupons. If I missed you, give me a shout and I will make sure to get some to you!

In the meantime, stop in Deans hardware , Mosheim Medicine Shoppe, Apex Bank in Mosheim, or Main Street Hair Design; I left a few stacks of coupons at these locations.

Don't forget to make the most of your time and take advantage of our new online ordering platform!

We moved here from NE Georgia about 5 years ago.

Growing up outside of Atlanta, my parents often chose the Smokies as a vacation destination, but that was only a short glimpse of what East Tennessee is actually like.

My family has had so much fun discovering all the unique tastes and traditions of this area; Dr. Enuf has definitely been one of those. Personally, I do not care too much for the original, though I do enjoy the herbal cherry from time-to-time. But the story behind the beverage fascinates me, and the number of folks I see enjoying it around here is a testament to its lasting legacy.

Now, I love buying into hype and experiencing the latest trends, especially when it comes to food. So, when I heard about a new flavor of Dr. Enuf, I knew I had to try it.

I totally underestimated the mania that would follow: gas stations selling a week's worth of product in hours, assembly lines breaking down, and everyone talking about whether they had managed to get their hands on the prize.

I had no idea it would take me two weeks to finally track some down!

What does any of this have to do with Pig in a Poke?
I view my food as unique, and one thing that sets me apart is my dedication to the product I serve. Apart from the buns and the dill pickles (I just haven't quite figured out how to produce those within the limitations of working out of a trailer), the only menu item that isn't made from scratch is the tater tots. Nothing else tastes like Pig in a Poke because the food I serve is only available here.

Maybe there is a parallel here. The "About Us" page on the beverage's website tells a great story of how they got their start; a commitment to quality, purposeful ingredients, and taking great measures to get their story out into the East Tennessee community allowed America's first energy drink to take off.

So, how was the latest iteration of this legacy? Surprisingly good! The backbone of the vintage-style grape soda was highlighted by the herbal ingredients, giving it almost a spicy aftertaste. Side note: it pairs very well with our loaded tots, but good luck getting your hands on a bottle!

The photo captures the perfect break in a hard day's work, and the Grape Enuf did its job in giving us a boost to finish our end-of-day routines.

And if you have made it this far into my ramblings, I would just like to say thank you. We are having a lot of fun in this East Tennessee chapter and are still so grateful to have been adopted by this community!

TLDR: Pig in a Poke is the place to be for breakfast!

I can't stop talking about this bacon! Come try our bacon, egg & cheese sandwich and experience the smokey Benton's Bacon, Bauernhof Kitsteiner farm egg and savory cheese blend for yourself! Might I mention that all of that is now tied together with blackberry jam made right down the road in Knoxville; what?!?!

We are now featuring fresh chorizo in our breakfast burrito too!
