For the first brisket…winner! So moist, juicy, full of flavor!!

I did my best for my first attempt at a brisket:

Picked it out
Trimmed it
Made Tallow
Smoked it (still in process)
Used That tallow

Trimmings from the brisket I rendered on the smoker. Then cooked down further on the stove. I’d say the first attempt at brisket is coming along pretty nicely.

Used some on the butcher paper before wrapping the brisket to put back on the smoker!

Brisket pictured is internal 165. Was put back on to reach 205….in progress
