Chef and food truck owner Pheastly is no stranger to food. I grew up with my friend which her family happens to own a restaurant in Colorado. Her family runs Creative Cafe, a nonprofit that employs mentally and physically challenged adults.

“I’ve been in there since I could see over the counter,” Machelor says, who shares both her father’s love of food and her mother’s altruistic side.

Yes y’all! I finally decided it was time to say goodbye to my friend after staying for almost 10 years! If you know me, you know I loved my chef but the maintenance and repairs lately had become very stressful and it was time baby!!!! Gods timing! Feeling so blessed!!! God has just been making some amazing moves in my life this year!

We had the honor of catering our now college bound SuperPhan’s graduation party from Clear Creek High with a hefty BBQ spread of Carolina Gold pulled pork, sweet mesquite shredded chicken, split & smoked HOTTT links, garlic mac & cheese, cornbread muffins & garden salad, with housemade dressings & sauces all cooked & served by yours truly at a beautiful rental home on Georgetown Lake.

Congrats Parker Scott!! Continue your legacy of greatness out there at KU!!

When we launched Pheastly here in Clear Creek County near the end of 2021, never did I imagine we would be featured in a Denver magazine less than 2 years later! Beyond our gratitude for all the love shown to us by our new community that has gotten us to where we are today, we are honored to be mentioned alongside other Asian American industry leaders of Colorado and can’t wait to see what the phuture holds after this huge milestone!! What’s Pad Krapao?! Well it’s always been a favorite in our pham, but as we recently learned during our trip to Bangkok…it’s also the true national dish of Thailand!
A staple in local Thai households, this simple combo of aromatic steamed rice* layered w stirfried ground protein + holy basil, then topped off with a crispy fried egg might sound unassuming on paper but it is truly a KRA POW to the tastebuds! If you were hoping for a bland , sorry to disappoint!

Cheesy creamy child-friendly goodness that you can optionally kick up w our crowd-favorite toppings bar:

On deck is teriyaki chicken confit, real bacon bits, seared baby bellas & kale, caramelized onions, fried shallots, scallions, Frank’s Red Hot and garlic butter breadcrumbs! (GF & vegan option as garlic olive oil pasta is available!)

We did it!! We held our first ever Sunday Bruncheon as a Valentine’s Couples DIY Sushi Party!

Our guests enjoyed a pushcart buffet that included fresh fish & kani, eggplant “eel”, mirin marinated cukes, gomae spinach, masago & vegan caviar, Pheastly microgreens, various furikake & soy sauces (as well as some market finds I brought back from Tokyo!) to roll up their own creative temaki handrolls.

Everyone seemed to love the event (check out the sweet plug a guest posted!) and we are so excited to finally launch our quarterly Sunday Bruncheon series!

Next one will be held in the springtime, will be a different kind of menu and we can’t wait for you to join then!
