Home cooking - BLT sandwich (bacon, lettuce, tomato).

My current visit here in Michigan is ~ 1 month long (9-7 to 10-11).

I took pictures of many memorable meals - from both restaurants and home cooking. Plenty of good meals in Frankenmuth, Reese, Ann Arbor as well as a few fried perch and walleye meals - it is quite hard to get either of those in Denver.

Another treat was a BLT using fresh tomatoes from the garden.

The other ingredients:

- Everything Seasoning sourdough bread - toasted & buttered
- Kirkland thick-cut bacon, baked in the oven
- Romaine lettuce hearts
- Olive oil mayonnaise and yellow mustard
- extra sharp cheddar slice

We saved a few tomatoes for when my brother and nephew arrive in the wee hours tonight. My nephew is quite fond of homemade BLT’s - you just can’t get tomatoes like that in the grocery store. The closest approximation to your own garden is a farmer’s market.

The sandwiches were so good I had to have 2. I also had some of the leftover oil & vinegar colesalw from Norm’s that was leftover from the Miller reunion.

Notice I payed homage to my famous friend / chef Simon Majumdar with the 😉

Getting opinions here - sort of like the peanut butter argument - smooth or chunky?

I like big chunks of diced red onion, tomatoes, and avocado in my guacamole along with coarse ground black pepper - big bold flavors are my choice.

What is yours?

James Dish - crab toast & crab Caesar 🦀

I haven’t featured any dishes from my friend & former roommate James in a minute, so this was due. I like to feature bachelor meals when I can as James and I both generally just make meals for 1.

The crab is from Costco - it was on sale for $10 off. This package was ~ $40.

The crab was tossed in a garlic cream butter sauce.

When you are single, it doesn’t always make sense to fire up the grill and eat the crab hot with clarified butter. Sometimes it is easier to make simple smaller dishes like this. That package of crab will make many meals for a solo person.

Bawarchi Biryani - Centennial, CO 🇮🇳

So on Sundays, after church, my cousin and her husband generally join my brother Peter and I for brunch. We take turns picking a different restaurant out each week. There are a few favorites we revisit but Denver has such a plethora of options that it makes it rather easy to just try new spots as well.

Pete’s favorite local Indian spot is Bawarchi Biryani. They had a bad fire last year and decided to totally remodel the place. In the interim they stayed open by offering carry out at least whilst working out of 2 food trucks as they remodeled.

They recently reopened for full service and so today was our 1st visit since then. I have to say - the decor is a step up from their previous look. They now have golden plated menus, golden silverware, new water carafes, and the entire decor is all different and much nicer.

They also have a small bakery and sell homemade desserts and bread items - this is still in development but they had a small selection of each.

Here is what we ordered:

Daniel - chicken tikka masala.
This is your standard Indian dish which is credited as being invented in Glasgow, Scotland in the early 1970’s. I decided to get chicken as my protein today but I often order this dish with shrimp or lamb.

Peter - boneless chicken biryani
This is a classic dish which I believe has Persian roots. It is very rice heavy and served with several dipping sauces, one yogurt based and the other peanut curry based.

My cousin’s husband - Chicken Mughlai which is
chicken cooked in rich cashew creamy sauce with coriander and egg.

I also orderer some garlic Naan to go with our meals. I prefer Naan to basmati or white rice, although I generally have a little of each.

Pete and I had lots of leftovers. I find it is often just as good or better the next day. I reheat my main dish in a skillet and the Naan in the toaster oven to crisp up.

July 4th meal - low carb brats & sauerkraut

Let me 1st preface this by saying I have been dealing with some nausea from a recent concussion and thus haven’t eaten anything except for the occasional yogurt & mandarin orange for the past week.

So I wanted to go easy and not overdo it.
I am basically OMAD (one meal a day) + snacks at this point, so I am filled up with about 1/3 of what I used to eat.

I am also trying to shave off a few pounds before my family reunion in September. I am currently sitting at 215 # and would like to get to 2 bells. So I am back to a low carb diet until I hit my target weight.

MD Anderson, my longtime cancer treatment system, also recommends a keto diet for cancer patients. So I skipped the bun and went for a low carb tortilla instead. I foresee a lot of salads and steak & veggies in my near future.

I find with brats that the old Beastie Boys song rings true - “slow and low, that is the tempo”.
We have propane grills at my apartment complex, so I utilized one today for the grilling. I go for 20 minutes on low-medium heat. I am constantly watching for flare ups and have a 2 heat type system going generally.

I added sharp cheddar cheese, mustard, diced red onions, and added a little kraut to the brat before eating. Course ground salt and pepper of course. I managed to get 2 brats down and a creme brûlée dish of sauerkraut as well, and feel full & happy.

If you enjoy my posts, I’d be so grateful if you’d like, share, or follow...your support helps keep this passion project alive and growing!

A quick hitter - I made another chicken breast salad with oil & vinegar, but this time I added radish to the vegetable mix for some zip.

Home cooking - chicken salad w/ oil & vinegar 🥗

I have been trying to lose ~ 15 # to get down to 200 #. In that attempt to lose a few lbs, I have been trying to eat more low carb meals.

Which leads me to tonight’s meal - salad with romaine hearts and:

- pan sautéed chicken breast seasoned with Sucklebuster’s SPG 🐓

- tomato on the vine 🍅

- baby carrots 🥕

- diced red onion 🧅

- cucumber 🥒

- 2 cheeses - crumbled feta and rustic cut cheddar 🧀

- Ken’s oil & vinegar dressing

- coarse ground pepper and kosher salt (this is on pretty much everything & so it is almost universal that I use this although I am specifying this now for completion)

This was rather tasty and I have enough chicken breast for at least 2 more salads, so I am looking forward to that. I am basically OMAD + snacks these days - one meal a day and some snacks.
But this is one of those meals where you wish you could have another portion of.

A treasured childhood memory crushed - the story of Mrs. Grass Chicken Soup.

Well, I decided to take a trip down memory lane recently and purchased the iconic Mrs. Grass’s chicken noodle soup.

For those unfamiliar with this product, let me elaborate. This soup comes in a box with:

- dry noodles
- a seasoning packet
- the inconic “golden nugget” - a large marble sized clear nugget in some sort of dissolvable coating that contained oils and bouillon

The maneuver is that you boil water, then add the dry noodles and seasoning packet. Finally, you drop in the golden nugget and watch it slowly dissolve, releasing the oils and bouillon.

Growing up, it was a great honor amongst my brothers and myself as to who had the honor of releasing the Golden Nugget. The lucky winner would release the nug and we would all watch with glee as it dissolved and disappeared.

To be honest, the soup itself wasn’t all that great - the noodles were thin & sparse, there were no chunks of chicken, and no vegetables either. It was basically just broth + noodles - good for when you had a cold or sore throat. But the golden nugget elevated it to mythical status when you were a youngster.

So I bought the soup, preparing to cackle with delight as I relived “releasing the Kraken”.

So you can imagine my confusion and abject horror when I couldn’t find the golden nugget anywhere amongst the contents of the 1st box. The soup generally comes in a 2 pack, so I opened the 2nd box and frantically searched for the nugget, only to be stymied once again.

In a fit of rage, I did an online search, and then discovered the ugly truth - Heinz had discontinued the golden nugget in 2016 😞

Son of a… another treasured childhood memory crushed, like a boot coming down on an unsuspecting insect.

Atomic Cowboy 🤠

This restaurant is a combination of 2 different franchises - Denver Biscuit Company, which makes primarily biscuit based breakfast & brunch grub, and Fat Sully’s, which specializes in pizza and burgers. I believe you can order from the Denver Biscuit Company until 2pm, whilst the Fat Sully’s menu is all day.

First off, the decor is rather hip here. They have a red LED / neon sign built into the floor as you enter the restaurant. There is a cool cowboy painting and a buffalo head mounted above the kitchen entrance. The 2nd room also has the roll up garage type doors you see at places like Postino’s.

My goto dish here early is the shrimp & grits. I get this every time we come for brekkie or brunch. I opt for cheesy grits and it is served with a delicious hearty sauce and an ample amount of shrimp, with their signature biscuit in the middle.

They have a plethora of biscuit sandwiches that all sound & look good and I may try one someday if I am feeling adventurous. My brother likes a more traditional breakfast with eggs & bacon and you can get that as well.

If we come in the evening, my favorite is the Lights Out Burger which is only $8.99? on Mondays - a great deal on this double smash burger with cheese. I highly recommend the parmesan garlic waffle fries as well.

All in all, this restaurant is a solid choice no matter when you go and is now in my regular rotation. My photos are from multiple visits, the latest being just today.
