An update for Blue Sparrow Coffee on Blake Street: We hate this as much as you do, but we will be closing our Blake Street location early at 12pm due to continued AC issues until the heat has died down a bit. We have done everything we could including replacing the entire system. We are stuck waiting on parts, and it is just too hot for our team in the afternoons. Our Platte Location will still be open for regular hours. We will continue to keep everyone updated via Instagram.

Calling all carb lovers! Did you know that bakery provides our delicious pastries? Their shop is located just a few blocks from us and makes our pastries with grains sourced locally.

Hearth founder Matt Quinlisk started his journey within the Colorado baking world by working as the pastry chef at Moxie Bread Co. in Louisville, where he worked with James Beard Award Outstanding Baker semifinalist Andy Clark. During Matt's time with Moxie, he developed a deep appreciation for sourcing and milling local Rocky Mountain grains, a practice he now brings to Hearth and Blue Sparrow by extension. Last month we completed our quarterly "Sustainability" training with the Blue Sparrow Coffee barista team! Meaning we are on schedule for 2023: Report each year, train each quarter, track impacts each month, and drink coffee each day.

This quarter we took a trip back to the start of our "Sustainability" journey to catch all the new faces up on where we have already been and where we are headed next! This years goals?
Update our vision statement to directly include "Sustainability"
•Work on reducing waste from 5 lb coffee bags and milk containers with suppliers
•Fix our HVAC at Blake Street
•The list goes on and on (and you can read it on our 2022 "Sustainability" Report)

EYES CLOSED symbolizes finding your identity from being broken by the past inspired by Kintsugi. Kintsugi (kin-tsoo-gee) is the Japanese art of fixing broken pottery by rejoining the fragments with gold adhesive. This practice emphasizes the fractures showing that something once broken can be more beautiful than it ever was before, giving it a second life.
