HOT HONEY GARLIC SALMON BITES

1 lb. Wild caught salmon
4 tbsp. Olive oil ( 2 for searing)
1 tbsp. Of minced garlic
2 tbsp low sodium soy sauce
1 tbsp. Sriracha
2 tsp. of rice vinegar
2 tbsp honey
2 scallion (1 for garnish)
1 tbsp. of butter

1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp black pepper
1/2 tsp salt

CHEESY CASSAVA BITES W/ CULANTRO SAUCE

2lb. Cassava (fresh or frozen)
4 tbsp. of melted butter
3 tsp garlic powder
1/2 small scotch bonnet seeded and finely chopped
1 scallion finely chopped
8 oz. of mozzarella cheese
Neutral Oil for frying

1/2 cup sour cream
1 tsp. Of minced garlic
1 bunch of culantro, (or cilantro) chopped
Juice of 1-2 limes
Salt and pepper to taste
