This is what we mean when we say tender! 🔥

These pork belly burnt ends have spent hours taking on smoke, slowly rendering, and building that sticky bark around the edges. We let time and heat do their job until the inside is soft enough to press apart with just two fingers.

No knife. No fork. No pulling or fighting with it.

That tenderness does not come from rushing the cook. It comes from knowing when to leave the pit alone, and recognizing when the pork belly has finally reached exactly what we’ve been chasing.
