Happy Holidays from and I. Been dormant on the socials, likely will be for a while but still chasing new flavors and the best of what’s around, now in Tennessee.

This one surprised me, the Neapolitan Ice Cream flavors of the Kahira-ini Revival beans took this trendy cocktail to a whole other level. If you haven’t discovered yet, follow and pick up some goods. If you are in Memphis pop-in next weekend for their grand opening.

Spring dried fungi blend. Dayum.

Morel, Wood Ear, Chicken of the Woods, Pink Tipped Coral, and Oyster - packed with flavor, vitamins, protein and minerals. I know a lot of people that say they hate mushrooms, I get it. For me, I like to flavors they bring, rarely do I just eat a mushroom straight up or sautéed, but I work them into all the things.

This is what I like to cook. Slow & low.

The preparation is from & inspired by a dish from Les Jardin des Plumes in the town of Giverny where Monet lived and worked. It’s the first dish I did when I started cooking during the pandemic and even if other courses steal the show it remains my favorite. During peak tomato season it’s divine.

It’s Cara Cara Season🍊, and once these start poppin I immediately scoop them up to eat, dehydrate and best of all to accompany an Old Fashioned - they have just the right amount of sweetness so I don’t use any or much sweetener and there’s a hint of a raspberry flavor to them which adds another delicious layer ❤️👌🏼😘

These beauties from Baynes Sound BC 🇨🇦 were 🤤 - set them aside for the fam in the kitchen on soup night but the guests discovered them and they were gone too soon.

Gave me some East coast vibes with their briney lead, but that cucumber with a hint of slate at the end was very West coast. We did them three ways with traditional cocktail, mignonette & Bloody Mary sauces - didn’t have a good base so we just shucked and placed them in the snow.👌🏼😀

Cheers to all who survived the prep and delivery of the Thanksgiving goods this year. The family kept me mostly out of the kitchen but I did get to play with cocktails like this Manhattan riff using pumpkin shrub & candied pecans.

Autumn in NY
2oz Bourbon or Rye*
1 oz Vermouth
2 dashes of Walnut Bitters
1/2 oz Pumpkin Shrub
Candied Pecan Rim
Stirred & double strained
*Used Weller because it’s wheated made things little sweeter more reminiscent of a holiday pie
