Quick healthy cookie hack using protein oats 🍪🥜🍌

It’s like overnight oats in handheld form and even doubles as dessert with a scoop of ice cream! 🍦

You now have permission to have cookies for breakfast! 🙌 Even better with a scoop of greek yogurt ☺️

Mix the following in a bowl.

1 container PB protein overnight oats
1 1/2 tbsp coconut flour (or 1/4 c almond flour or flaxseed)
1 tbsp maple syrup or coconut sugar
1/2 tsp baking soda
1/2 tsp vanilla extract
optional: 2 tsp oil (if you want flatter more traditional cookies)

Portion into 4-5 balls. Flatten slightly. Bake on a cookie sheet at 350 degrees for 10-12 minutes until golden. Serve warm.

Alternatively, cool completely and frost with Greek yogurt!

Whether it’s literally being immersed somewhere outside where I feel grounded, expansive, alive

OR 

Whether it’s the fresh, vibrant, gorgeous plants in my kitchen and on my plate

Some of my most clear and cherished memories:
🌲Feeling my feet in the sand as I gaze into the ocean
🌲Watching a sunset in colors only nature can create
🌲Whale watching on San Juan islands
🌲Mountain hikes in Lucca, Italy
🌲Catching lightning bugs in the middle of summer
🌲creating meals with the freshest farmers market produce
🌲Reading and sun bathing on the sunny beaches on Florida’s west coast
🌲Eating leisurely dinners outside with incredible food and even better companions
🌲Boat rides on the Lake on July 4th
🌲Blueberry picking and apple picking, especially unplanned foraging adventures 🐿️🫐

And even daily indoor tasks that would be impossible without the cycle of nature around me!

Grateful for the relentlessness, beauty, and resiliency of this Earth! May she continue to thrive always + forever 🌎🫶🏽💙💚

Rich in micronutrients, and fiber, and one of the highest sources of plant-based protein, who knew pumpkin seeds could double as a flour to create delicious buttery tasting baked goods?!

Save this recipe and send it to your gal pals, nut-free friends, or anyone craving a healthy baked good!

Pumpkin seed protein cookies
1 c ground pumpkin seeds
1 1/2 tbsp coconut flour
1 scoop protein
1/2 tsp baking soda
1 tbsp ground flax seed
2 tbsp tahini or nut butter
1 tsp vanilla extract
1/3 medium banana - mashed (or sub applesauce)
1 tbsp maple syrup
Optional: 2-3 tbsp monkfruit or coconut sugar
chocolate (for pressing on top)

Lemon Blueberry Cake with vanilla cake mix, butter, eggs🍋🫐🍰

Topped with a luscious whipped coconut cream frosting + swirls of jam 🥰

Chocolate Topped PB Crunch Protein Bars with honey almond crunch cereal!

Protein packed thanks to Peanut Butter and Almond Butter + an extra boost from vanilla protein

The perfect treat to have stashed in your freezer 👌🙌🥜🍫



Ingredients:
1/2 c PB
1/4 c almond butter
1/4 c vanilla protein
1 tbsp monkfruit or allulose
1-2 tbsp liquid sweetener
2 tbsp almond milk
2 tsp coconut flour or 2 tbsp almond flour
Optional: cinnamon + vanilla
1/4 tsp sea salt
For stirring in: 3-4 tbsp honey almond crispies

Topping: 1/4 c cacao, 1 tbsp melted coconut oil, 1 tbsp liquid sweetener, 3 tbsp non-dairy milk

Flaky salt, cacao nibs

Blend the base ingredients in a food processor to create a thick dough, Press into a shallow parchment lined dish.
Melt the chocolate topping ingredients over low heat to create a glossy ganache. Pour over bars while warm.
Top with salt and cacao nibs.
Freeze for a few hours before slicing into squares/bars.
Store refrigerated.
