Today, we’re having Turkey Gukbop in the Clark family household! Took the carcass and made a delicious stock and leftover shredded turkey with tons of scallions and hot rice. Thanksgiving to me is not just about the celebration of abundance but also a celebration of resourcefulness and resilience that it takes to reap a harvest. And a celebration of all the amazing people that bring joy in our lives.
