My take on Pozole…
I actually got this idea from a restaurant I visited.
They had a yellow lamb pozole on the menu and it was really good, and I wanted more! So of course I thought I could recreate my own version…and did!

I added a few more veggies that aren’t traditionally found in pozole, but it’s my soup so I can do that 😜

Rough ingredient list:
Lamb
Hominy
Serrano & Fresno chiles
Tomatillos
Onion, garlic, green onion
Spinach
Cilantro
Red & yellow mini peppers
Chopped Carrots & sweet potato
Coconut milk
Cumin & other seasonings
…a bunch of toppings 😆
