Who is Mr. CryoCrinkle?
Mr. CryoCrinkle is our mascot to help spread the word about our store. Let’s look at his name, CryoCrinkle. The first part, “Cryo”, is of Greek origin and means low temperature; frost, cold, or freezing. The second part “Crinkle” means to change shape and cause lines or transform appearance.
So what does this have to do with us? Well we have been experimenting and now want to share with everyone we know and don’t know the experience of freeze dried foods. We use the process of lyophilization, “Wait whut?”. Ok, freeze-drying - which is the process of freezing products to temperatures as low as 50 degrees below zero. Then subjecting the product to a negative vacuum equal to outer space, while the temperature in the chamber is gradually increased. This process bypasses the “liquid” state of water, going from a solid to a gas via sublimation. This removes the moisture, decreases the volume and weight while securing 97% of the nutritional value. Because of the water being removed, the product is less prone to spoiling, or supporting conditions for growing mold or bacteria. In fact, the shelf life of freeze dried products increases by 2 decades if stored properly.
What does freeze-dried candy, fruit, veggies, etc taste like? The texture is completely different from the original composition of the product but the flavor stays the same or intensifies. Fruits become light and fluffy to the taste while some soft candy becomes light, crunchy, and expands in size.
