Just arrived | New single-cultivar matcha offerings 🍵

Nestled in the mountains of Shizuoka, Jiro Katahira ranks as one of the most passionate collaborators we have the pleasure of partnering with. He oversees one of the most extensive tea gardens in Japan, with over 22 distinct cultivars—each hand-harvested and processed separately. He has made a name for himself as a producer of some of the finest sencha and kabuse being produced anywhere, but for the past three years, he has quietly been refining his approach to expressive and distinct matcha.

Last year, we were proud to be the first to present his Okuyutaka Matcha, the first release from his new project. Okuyutaka returns from the 2026 harvest, alongside a single-cultivar Okumidori offering. These two hyper-limited matcha releases exist on the cutting edge of Japanese tea production, presenting the distinct terroir of Shizuoka alongside a refinement that only craftsmanship of this level can offer.

Fewer than 100 tins of each offering are available from the 2026 harvest making this one of our most limited and coveted releases of the year.

A place devoted entirely to matcha—its cultivars, terroir, producers, preparation, and the remarkable range of flavor found within a single bowl.

Our menu reflects the relationships we’ve built over years of traveling through Japan and working directly with growers and producers. Some teas are familiar, others exceptionally rare, but each offers a distinct expression of where and how it was made.

At the counter, matcha is prepared one bowl at a time, with the same attention we give it at origin.

This week we’re excited to welcome our friends at SEKKISEI to Kettl Matcha Sen Mon Ten to celebrate their new collection with a special collaboration inspired by botanicals and the Japanese tradition of natural remedies.

From October 1–4, we’ll be serving the limited-edition Hyssop Amazake Matcha, combining vegan matcha foam with soy and coconut, filtered amazake, and fresh, aromatic hyssop. Each beverage will be paired with higashi, a traditional matcha sweet made by local wagashi artist Phoebe Ogawa.

Available exclusively at Kettl Matcha Sen Mon Ten from Thursday, October 1 at 12pm through Sunday, October 4 at 7pm. Guests will also receive a complimentary gift from SEKKISEI with purchase, while supplies last.

Every product we serve begins with curiosity, collaboration, and countless rounds of refinement. When we set out to reimagine our matcha soft serve this summer, we had one burning question: How can we create a dessert that expresses the full character of our matcha while achieving the texture we envision?

To find the answer, we partnered with Unnecessary.
Founded by the team behind the acclaimed cocktail bar Double Chicken Please, Unnecessary approaches ice cream with the same creativity and precision, reimagining cocktails and thoughtfully crafted beverages into frozen desserts. We spent time testing, tasting, and refining every variable—from sugar and fat content to the concentration of matcha in each batch.

Their thoughtful, methodical approach challenged us to rethink every detail, helping us develop a soft serve base made entirely from scratch in-house that allows the sweetness, richness, and depth of our matcha to exist in balance. Collaboration like this is one of our favorite parts of what we do—learning from people who have dedicated themselves to mastering their craft. The result is now being served every day at our Greenpoint Ave cafe. This past Friday, the Kettl Studio Chef Series welcomed Chef Anita Lo, Culinary Director of Stylus NYC. Together with the Stylus team, Chef Lo presented a five-course menu paired with teas curated by Kettl founder Zach Mangan—each course reflecting a shared commitment to creativity, seasonality, care, and the thoughtful attention to detail that shapes the experiences we create for our community.

The evening’s menu embodied the kind of thoughtfulness we deeply admire, with each ingredient prepared with remarkable care and intention. From tender fresh scallops delicately seared with kelp and loofah, to roasted Long Island duck paired in striking harmony with frozen gyokuro, each course revealed a careful interplay of texture, temperature, and layered flavor.

Creating opportunities to share thoughtful, immersive experiences with our guests is deeply important to us, and we are grateful to Chef Lo and the Stylus team for partnering with us for this evening. It was an honor to moderate a panel and tea pairing lunch with some of my favorite beverage pros - Max Falkowitz, Dean Fuerth and Steven Rhea - about the the charm of Yame tea and how it fits into the puzzle of the larger development of tea and its place in the hospitality industry. I was lucky to have the opportunity to bring these fine folks to visit the the growers, manufacturers and hospitality pros from throughout Yame and it was so nice to see the indelible impact it had on the visiting guests.

Seeing how far tea has come in the past decade, and seeing the energy and excitement from the industry provides me with an excitement that is hard to put into words. I want to personally thank the government of Fukuoka for their support in putting together this trip and for all of the growers for their time, Chef Takuma and the team at the Aman hotel for putting together an amazing meal, and finally for all of the guests who joined the lunch.
