As I do my menu homework for the upcoming holidays, I realized that this will be the first for the Brentwood/Oakley/Discovery Bay area.
I will offer some type of turkey dishes for Thanksgiving- just haven't decided what yet. Maybe another quick survey?
Over the years, these smoked ham offerings have been the most popular. These slow smoke over hickory for a few hours. This year I am going to baste them with a pineapple/mango glaze.
This whole ham is one of dozens that I smoked last year. In the second photo are ham trays that I assembled from the same hams. These were popular as many brought these trays to family gatherings as their contribution. Individual meals were also created with it.

For the first time I offered this chicken marsala pot pie. I am still working on these right now, but these were much more popular than I anticipated. Today is crunch day once again. I've been up super early this morning making pot pies for tomorrow's deliveries.
This is the bulk beef stew pot pie filling I created. Although the numbers were close, the beef stew outsold the chicken marsala pot pies. In addition, the individual size (shown here) was more popular by a 12-1 margin.

Many have asked how I create so many different pot pie fillings. Pretty simple actually, it is always a goal to make the pie taste just like the description: and the ingredients must be as fresh as possibly, and not overcooked. This is the filling for my latest creation: The Beef Stew Pot Pie. This bowl holds enough for about 30 pot pies. It takes quite some time to trim the fat from the huge beef roasts and to hand cut the veggies. But what you get is a chunky, fresh pot pie.

I actually began preparations yesterday for the pot pie specials this week. Yesterday was shopping and assembling the pot pie baker boxes, today I make the Italian sausage for the Italian sausage & potato chowder-and lastly trim the 30 lbs of beef that will be used for the beef stew pot pies. This ensures a smooth week, as this is the busiest pot pie campaign to date!
While making the sausage I made some Italian sausage breakfast sausages for home consumption for sausage dogs and sausage & eggs!

Although this taco salad did not make the cut during our most recent customer survey, it is still one of my favorite warm weather meals. Chopped romaine lettuce is layered with seasoned ground beef simmered with yellow onion, grape tomatoes, chopped sweet red onion, yellow corn, sliced black olives, fresh salsa, shredded cheddar cheese, guacamole and sour cream, this is both a flavorful and satisfying meal that doesn't leave you bloated.

I bottled my batch of Korean cabbage kimchi this morning. It did improve overnight while fermenting, but I will leave them outside of the fridge for 2 more days to achieve the slightly sour fermented taste that I prefer prior to refrigeration. My daughter Lushia and grandson Andrew love this stuff, so half of the batch will go to them!
