Garlic Butter Shrimp & Corn Skillet 🌽🍤
Juicy garlic butter shrimp paired with sweet, buttery corn on the cob and finished with fresh parsley and a squeeze of lemon. This quick and flavorful meal is perfect for busy weeknights, summer cookouts, or a high-protein dinner that feels restaurant-worthy.
Ingredients
1 lb (450g) large shrimp, peeled and deveined
4 ears corn, cut into halves
3 tbsp butter
4 cloves garlic, minced
1 tbsp olive oil
1 tsp paprika
½ tsp Cajun seasoning
½ tsp black pepper
½ tsp salt
1 tbsp lemon juice
1 tbsp fresh parsley, chopped
Lemon slices, for serving
Directions
Bring a large pot of water to a boil and cook corn for 5–7 minutes. Drain and set aside.
Season shrimp with paprika, Cajun seasoning, salt, and black pepper.
Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
Add shrimp and cook for 2–3 minutes per side until pink and opaque.
Stir in garlic and remaining butter; cook for 1 minute until fragrant.
Add lemon juice and toss shrimp in the garlic butter sauce.
Add cooked corn to the skillet and coat with the sauce.
Garnish with parsley and serve with fresh lemon slices.
