At three o’clock this morning there was nobody in this building at all. 🔥

The pork goes on around seven at night, right as everybody leaves. Then the pit runs at 220° all night in an empty, locked, pitch-dark building and comes off sixteen hours later, about the time we unlock the door. There is no shortcut to pork that falls apart against a fork. There is only the sixteen hours.
