UNM pop-up is officially over.
A little late, but we wanted to say thank you.
From the first day to the very last day, thank you to all the UNM students, staff, and customers who showed us so much love.
When we first started making gimbap in a shared kitchen and delivering orders, we honestly had no idea if people would like it.
We only had one simple wish:
to introduce this food to New Mexico.
But because so many of you supported us, we were able to take one step after another without being afraid.
We truly believe Seoul Gimbap was built by all of you.
And now, we’re excited to share our next chapter.
We recently signed the lease for our first store at Louisiana Plaza, taking over the former Rich B’s Pizza location.
Our new address will be:
7200 Montgomery Blvd NE
Albuquerque, NM
Construction has officially started, and we’re hoping to open in about two months.
We still feel like we’ve received more love than we deserve.
So we’ll keep working hard to become a place worthy of that love.

Due to staff health-related issues, our Kim’s Market location is now closed indefinitely. We will be focusing fully on our UNM location for the time being.

We are also actively working toward opening a new location near Eubank & Juan Tabo. We’ll share updates as soon as we have more news.

Day 4 at UNM wrapped! ✅ We are uploading this quick update to say a HUGE thank you. The support has been incredible! ❤️

With the production volume growing so fast, we are doing our absolute best to maintain strict quality control. 🧐 If you tried our food and felt anything was lacking, please DM us directly! We want to hear from you and make it right.

Due to a staffing issue, Kim’s Market will be closed tomorrow.

However, UNM will be open as usual!

Starting January 20th, .jp .jp
Seoul Gimbap is popping up at the UNM SUB for six weeks.
When this pop-up was confirmed, we knew we had to level up — fast.
Thanks to the incredible hospitality and generosity of
Onigiri Sen in Seattle,
we were able to improve our flavor and refine how we make onigiri.
So grateful for the people who share their knowledge and open their doors.
Can’t wait to serve you at UNM. 🍙
