ONE OF MY BIGGEST MISTAKES AS A BAKER

Was thinking that all I needed to do was share my work on social media to attract paying clients.

Was I wrong?

No, I wasn't, because I did attract paying clients, but I wasn't ready for their orders—not in terms of quality or taste. Not to brag, but I always want to do better than your last bite.

I am talking about being ready in terms of branding and delivering.

Before I knew it, the one skill I am most passionate about became my worst nightmare.

I took every order with fear and a feeling of incapability.

A whole me! 😭

That's how I packed up!

I gave myself enough time to clear my head and then came back to the drawing board because I couldn't stop being a baker for anything in the world.

I truly love this profession, abeg.

We came back stronger! Believe me!

I FAILED AT SO MANY THINGS,

When I first started my pastry business here in Lome, I blamed it on my location for the longest time.

But as someone who has learned to always review a situation or an experience before taking action, I stepped back to think a few times. Then, and only then, did the loopholes become visible to my imperfect eyes.

I took note.

Now, I am working on fixing each of those mistakes one at a time to better serve you, my most cherished clients, here at Ify's Cuisine Lome.

I am making it a goal to take you all through the journey with me.

BAKING IS ONE SKILL WHERE YOU LEARN INSTANTLY FROM YOUR MISTAKES AT A COST.

Yesterday, I lost a full batch of cupcakes to fire.

I had placed them in the lower part of my oven but didn't think to regulate the heat.

Before I could finish scooping the next batch, my cake was ready and burning.

The moment I brought it out, I knew it was trash.

Even though it was golden brown on the outside, like some customers like it, the heat didn't give the baking powder time to do its work, so the cake was thick, heavy, and uncooked inside.

It was nothing compared to my soft and fluffy signature cupcakes.

I had to make another batch because I would rather do that than ruin customers' trust in the consistent and unique taste of Ify's Cuisine Lome pastries.

I love you too much to do that to you. 🥰

Some like a cake just done enough,

Others like it nicely done,

Still others love it golden brown.

Each time I bake, I put these preferences into consideration for every one of my customers.

Because I understand what it means to have your desires met.
