I rarely find the time to cook at home these days but when I do, this is the type of meal I like to eat. Grilled Amberjack, tehina creamed spinach infused with aji Amarillo, Israeli couscous pearls. No more amberjack left over but poached some eggs into the leftovers for breakfast today.

Product of wildcard request: Watermelon Boat Salad. Marinated watermelon segments in smoked maple syrup and rosewater, towered with avocado, cotija cheese, mint, pickled red onions and crispy green peas. When guests want me to “do my thing” instead of play my standards, it’s always fun to see what happens. Trust, when offered to us, is permission to be the free-est version of ourselves.
