to stay focused, consistent, and uncompromising as Singapore’s Musang King specialist.

Musang King is not just “sweet” or “bitter”.
There are at least 6 distinct taste profiles — dryness, bitterness depth, aroma, aftertaste, texture, and balance.
This is something you only learn through years of handling, tasting, and rejecting fruits — not from labels.

Six years ago, we closed our doors because of COVID.
From then on, we sold online, packed boxes, sent deliveries , but we never really saw who our customers were.

For the first time in six years, I stood in front of a room of people who chose to be there not just to eat durian but to give me a chance

It was also my first workshop ever.

Myth Busted: “Green Husk durians no bitter one”? 100% false.

A lot of people claim Green Husk durians are from young trees, not good quality, no bitterness, only “grey husk” or other variants taste better.
Totally untrue.

In reality, Green Husk durians are naturally more bitter, with a drier texture and that deep old-tree aroma many MSW lovers look for.

Here’s the real science 👇
Durian fermentation on depends on sugar breakdown and start fermenting, not the husk colour.
Every durian starts off sweet. As the sugars slowly break down, natural fermentation creates alcohol compounds, which give the durian its signature bitter, strong profile.

So simply put:
👉 Sweet = earlier stage (fresher)
👉 Bitter = later stage (more matured)

Both sweet and bitter can come from Green Husk or any husk colour — because it’s about ripeness and sugar activity, not the husk itself.

Don’t Fall Into the Trap!

You may see MSW durians being sold at $6–$12 per kg and think it's a great deal—but don’t be fooled. Many of these durians are oddly shaped and unusually heavy. Sellers claim it’s a “benefit” to the public because it makes MSW more “affordable” and accessible, but the truth is:

🚫 You’re not getting good quality MSW.
Based on experience and data, these durians are often unripe and have very low flesh yield. Most of the weight comes from the thick husk—not the edible part.

Let’s break it down:

A large portion of the weight (sometimes up to 500g or more) is just the top husk, which you don’t eat.

These fruits usually only contain 2–3 small compartments, and the flesh inside is often partially unripe.

So even though it looks cheap, you’re actually paying a lot for very little edible flesh.

💸 Many customers think: "Oh, it’s cheap, cannot complain." But in reality, it’s expensive because the value you get is poor.

And imagine if you order it for delivery—you’re not there to inspect it in person. Even if the seller didn’t intend to cheat you, people will still feel cheated when they receive heavy, odd-shaped durians with little to no good flesh inside.

This is why disputes often happen between sellers and buyers. At the end of the day, you’re paying for husk, not durian.
