For one afternoon, we had the pleasure of handing our bar over to Junghwan (JUNG HWAN), bringing a little piece of aery coffee 에어리커피 from Korea to Singapore. From Panama Geishas on filter to the Sudan Rume that accompanied Junghwan on his journey to the World Barista Championship stage, it was a chance to experience their coffee, their way.

More than anything, we were happy to echo aery’s approach to coffee here at ECHO — creating a space for our coffee community in Singapore to connect beyond borders and share a couple of really good cups together.

Every quarter, we look for coffees that strike a balance between discovery and familiarity — something with enough character to keep us curious on the brew bar, but still the kind we could brew at home every day. For Collection 02, we wanted each coffee to have a clear place.

Freshly roasted every week. Order by Wednesday, 12pm for the week’s roast, or drop by and let us brew you a cup.

A high-grown 74158 from Bensa, Ethiopia, processed as a 56-hour anaerobic natural. Floral, perfumed and reminiscent of umeshu, with juicy cantaloupe sweetness.

A natural Sidra and Caturra lot from El Diamante, Peru, chosen for its balance of dark fruit and brightness. Think dried currants, blackberry and bergamot.

A Red Catuaí natural from Carmo de Minas, Brazil, selected as the richer, more comforting espresso of the collection. Creamy chocolate, hazelnut and caramel with a soft floral lift.

aery coffee takes over ECHO! 🇰🇷 → 🇸🇬

This Tuesday (1 Sep), we’re so excited to welcome Junghwan Lim (JUNG HWAN), 2024 Korea Barista Champion and World Barista Championship finalist, behind the bar for one afternoon only.

On filter, expect standout coffees including Panama Lerida Estate Geisha Natural & Washed. With more than 100 years of coffee-growing history, Lerida Estate has a strong track record of producing exceptional, award-winning coffees — most recently recognised at Best of Panama 2026.

We’ll also be featuring Colombia CGLE Las Margaritas Sudan Rume Natural — an extremely rare variety and the coffee that accompanied Junghwan on his journey to the World Barista Championship stage. Enjoy it as espresso or with milk, a menu exclusive to the ECHO takeover.

This National Day weekend, our Dirty Latte is getting the ondeh-ondeh treatment.

Inspired by a familiar treat just next door at Maxwell, we gave our cult-favourite a little taste of home — double ristretto extracted over a concoction of pandan-infused milk, coconut cream and gula melaka, finished with coconut flakes around the rim.
